Toast sunflower seed by stirring over medium heat for 3 minutes
- 1 c. alfalfa sprouts
- 1 head leaf lettuce torn into bite sizes pieces
- 3-4 sliced radishes
- 1/2 sliced cucumber
- 2 sliced hard-boiled eggs
- Toasted sunflower seeds
- Favorite salad dressing
Zucchini Bake

In mixing bowl, mix together eggs, zucchini, onion, flour salt and baking powder
- 4 eggs, beaten
- 6 c. zucchini, grated
- 1 onion, chopped
- 1/4 c. flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1 1/2 c. grated cheddar cheese
- Paprika garnish
Hibachi Steak

Put a large skillet over medium-high heat and add half of the oil
- 2 tablespoons canola oil
- 1 large carrot, thinly sliced
- 1 zucchini, thinly sliced
- 1 medium onion, thinly sliced
- 1 (8-ounce) package sliced mushrooms
- 1 1/2 pounds top round steak
- 1 pound egg roll wrappers
- 1/2 cup reduced sodium soy sauce
- 2 tablespoons cider vinegar
- 2 teaspoons chopped garlic
- 1 teaspoon cornstarch
- 2 tablespoons butter
Hearty Vegetable Soup

Sauté onions and garlic in butter, add celery, carrots and seasonings, then broth
- 2 tbs butter
- 2 onions, chopped
- 3 garlic cloves, minced
- 3 stalks celery, sliced
- 3 carrots, sliced
- 1 lg potato, diced
- 2 tbs fresh parsley
- 1/2 tsp marjoram
- 2 tsp basil
- 1 tsp oregano
- 1 tsp salt
- 6 c. chicken broth
- 2 c. shredded cabbage
- 28 oz can diced tomatoes
- 1 can white beans
- 1/2 c. barley
- 1 c. frozen corn
- 1 lg potato, diced
Nutty Slaw

Combine the cabbage and apple in a bowl
- 1 bag shredded cabbage
- 1 shredded apple
- 2 tbs milk
- 1 tbs lemon juice
- 1/4 c. mayonnaise
- salt & pepper to taste
- 1 tsp sugar
- 1/4 c. chopped dry roasted peanuts
- 2 tbs chopped fresh parsley
Mexican Wedding Cookies

Heat oven to 400ºF. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl
- 1 c. butter, softened
- 1/2 c. powdered sugar
- 1 tsp vanilla
- 2 1/4 c. all-purpose flour
- 3/4 c. finely chopped nuts
- 1/4 tsp salt
- Powdered sugar

Vietnamese Style Fried Rice

Heat a tablespoon of oil in wok on medium heat
- Cooked rice
- 3 eggs
- Salt & pepper
- Oil
- 1/2 onion
- 2 minced garlic cloves
- 1/4 ” minced ginger piece
- 1/4 lb leftover turkey, cut into bite size pieces
- 1 diced carrot
- 2 tbs oyster sauce
- 2 tbs soy sauce
- 1 c. shredded cabbage
Catfish Sandwiches

Catfish: Cut catfish fillets in half; set aside
- Catfish:
- 1 1/2 pounds catfish fillets, rinsed and patted dry
- 1 box (8.5-ounce) corn muffin mix
- 2 tablespoons Cajun seasoning
- 1 egg
- 1/2 cup all-purpose flour
- Canola oil, for frying
- Sandwiches:
- 1 loaf store-bought garlic bread, baked per package directionsor bread of choice
- tarter sauce
- Butter lettuce
- Sliced tomatoes
- Sliced red onions
Beef Enpanadas

- 1 (9-ounce) package pie crust mix
- 1 large egg
- 1 tablespoon cold water
- All-purpose flour, for dusting
- 1 leftover steak from the Salisbury Steak recipe
- 1/4 cup leftover gravy from the Brown Gravy recipe
