Fettuccini Alfredo with Zucchini Ribbons

- 2 tbs olive oil
- 2 cloves garlic, minced
- 2 med zucchini (about 8 oz each)
- 12 oz Fettuccini pasta, preferably whole wheat
- 1 tbs all-purpose flour
- 1 c. cold 1% low-fat milk
- 1/2 c. evaporated skim milk
- 1/2 tsp salt, plus more to taste
- 3/4 c. freshly grated Parmesan cheese
- 1/4 c. finely chopped parsley leaves
Brown & Serve Dinner Rolls

Sprinkle the yeast in 1/4 cup of lukewarm water
- 1/4 c lukewarm water
- 2 packages active dry yeast
- 1 tsp sugar
- 1/2 c dry milk
- 1/2 c unsalted butter,melted and cooled to lukewarm
- 1/3 c honey
- 1 Tbs salt
- 6 1/2-8 c flour (white, whole wheat, or a mix)
- 2 c lukewarm water
Sesame Green Beans

Steam or boil green beans for about 2 minutes (still crisp
- 1 About 1 lb Fresh trimmed Green Beans
- 1 tbs oil
- 1 tsp sesame oil
- 1/2 tsp crushed red pepper (opt)
- 2 tbs toasted sesame seeds (untoasted is ok)
- Salt to taste
Giblet Gravy

Chop the giblets and the meat that has been removed from the neck
- Giblets from turkey (liver, heart, gizzard, and neck), cooked
- 4 cups turkey stock or broth or chicken broth or stock
- 2 chicken bouillon cubes
- 1 teaspoons poultry seasoning
- 2 heaping tablespoons reserved uncooked cornbread stuffing mix
- 3 tablespoons cornstarch
- 1/3 cup cold water
- Salt and freshly ground pepper
- 1 hard boiled egg, sliced
Baked French Toast Casserole with Maple Syrup

- 1 loaf French bread (13 to 16 ounces)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Dash salt
- Praline Topping, recipe follows
- Maple syrup
- 1/2 pound (2 sticks) butter
- 1 cup packed light brown sugar
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Spiced Couscous and Chicken

- 3/4teaspoon ground cinnamon
- 1teaspoon ground ginger
- Kosher salt and freshly ground pepper
- 4medium carrots, thinly sliced
- 1cup couscous, preferably whole wheat
- 2cups coarsely shredded rotisserie chicken
- 3tablespoons unsalted butter
- 1/2cup sliced almonds
- 1/4cup golden raisins
- 4scallions, white and light green parts only, roughly chopped
- 1/2cup roughly chopped fresh cilantro, plus more for topping
- Greek yogurt and/or harissa or other hot sauce, for topping
Overnight Toss Salad

- 3 c. chopped lettuce
- ¼ tsp salt
- ¼ tsp sugar
- Pinch of pepper
- 3 hard boiled eggs, sliced
- 1 c. pkg frozen peas
- 1/4 lb bacon, crisp cooked and crumbled
- ¼ c. sliced green onions and tops
- ¼ c. sliced celery
- 1 c. shredded cheese of choice
- ¾ c. mayonnaise
- ¼ tsp sugar
- ¼ tsp herbed seasoning
- Milk to thin
Turkey Soup

Place all the ingredients in a cooking pot, cover and simmer 20 minutes
- 2 quarts homemade turkey/chicken broth
- 1 c. frozen peas
- 1 c. frozen corn
- 1/2 c. leftover rice
- 2 c. leftover turkey, cubed
- 1 teaspoon Old Bay seasoning
- 2 teaspoons dried basil
- Salt and pepper, to taste
