Zucchini Corn Medley
- 5 med zucchini, cut into 1/2 inch chunks
- 1/2 c. water
- 1/2 tsp salt
- 1 10oz pkg frozen corn
- 1 4oz can chopped gr. chilies
- 2 tbs butter
- 2 tbs flour
- 1.4 tsp dry mustard
- 1/4 tsp salt and pepper
- 1 c. milk
- 1/2 c. shredded cheddar cheese
Preparation time 10mins
Cooking time 30mins
In saucepan over medium heat, cook zucchini in salted water about 6 minutes. Add corn and cook 1 minute. Drain. Stir in chilies and pour into a greased 1½ qt. shallow baking dish.
Melt butter in saucepan, stir in flour and seasonings until smooth cook 1 minute. Stir in milk and bring to a boil, stirring constantly. Cook until thickened. Remove from heat and stir in cheese until melted. Pour over vegetables.
Bake, uncovered at 350 degrees for 20 minutes.
