- Muffins:
- 1 1/2 cups flour
- 1 1/2 TB sugar
- 1 TB baking powder
- 1/2 tsp salt
- 3 cups shredded Colby-Jack cheese
- 1 cup milk
- 1 egg
- 1/4 cup (1/2 stick) melted butter
- Butter Glaze:
- 1/2 cup melted butter
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp onion powder
- 1/8 tsp dried parsley
Fish Tacos with Cilantro Lime Crema & Taco Crema

This is a combination of a few recipes
- Cilantro Lime Crema:
- 1/4 1/4 1/4 cup chopped cilantro
- 3 3 3 TB canola oil mayo
- 3 3 3 TB regular or light sour cream
- 1 1 1 tsp lime zest
- 1 1/2 1 1/2 1/2 tsp lime juice
- 1/4 1/4 1/4 tsp salt
- 1 1 1 garlic clove, minced
- Taco Crema:
- 1/2 1/2 1/2 cup regular or light sour cream
- 1/2 1/2 1/2 cup canola oil mayo
- 1/2 1/2 1/2 cup chopped cilantro
- 2 2 2 TB taco seasoning
- Tacos:
- Mahi mahi, tilapia, red snapper, or any other white fish fillets
- Salt
- Black Pepper
- Red Pepper
- Chili Powder
- Cumin
- Garlic Powder
- Flour
- Canola oil
- Flour tortillas
- Shredded cabbage
Swiss-Thyme Pull Apart Rolls

You can substitute Mozzarella for the Swiss
- 1 (12-ounce) tube refrigerated biscuits, quartered
- 3 tablespoons butter, melted
- 1 cup Swiss cheese, shredded
- 1 tablespoon fresh thyme
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Hot Spinach-Artichoke Dip

Oxmoor House ~ The original recipe has water chestnuts which I omitted because I don't like them
- 1 TB butter
- 1 cup finely chopped onion
- 2 garlic cloves, minced
- 10 oz package frozen chopped spinach, thawed, drained, & squeezed dry
- 14 oz can quartered artichoke hearts, drained & coarsely chopped
- 8 oz block 1/3-less-fat cream cheese, softened
- 8 oz carton reduced-fat sour cream
- 1 cup shredded Parmesan cheese, divided
- 1 tsp hot sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- Cooking spray

- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 2 large lemons
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, room temperature
- 1 large egg
- 1/2 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- 1/2 cup granulated sugar for rolling cookies

- 1 (18-ounce) box devil's food cake mix
