Cheese Crackers

I should have never made these!!! We can't stop eating them!!! Taste great by themselves or with soups or salads
- 1 stick butter, softened
- 2 cups shredded sharp cheddar cheese
- 1 cup flour
- 1 tsp salt
- 1/4 tsp red pepper
- 1 cup chopped pecans
Chicken Florentine Melt

This tastes just as good whether it’s breaded or not
- ½ cup flour, almond flour, or coconut flour
- Kosher salt & pepper
- ¼ cup milk
- 2 eggs
- 4 boneless, skinless chicken thighs
- 2 TB butter
- 2 TB olive oil
- 4 slices Provolone or Swiss cheese
- 1½ cups cherry or grape tomatoes, halved
- 4 cups baby spinach
- 2 cloves garlic, minced
Kabob/Grill Marinade

Since putting on skewers tends to be time consuming, we like to put these in a grill basket
- Italian:
- 1 envelope Good Seasons Garlic & Herb or Italian Salad dressing Mix
- 1/3 cup oil
- 1/3 cup dry white wine
- 2 TB lemon juice
- Citrus:
- 1 envelope Good Seasons Zesty Italian or Italian Salad Dressing Mix
- 1/3 cup oil
- 1/3 cup orange juice
- Teriyaki:
- 1 envelope Good Seasons Oriental Sesame or Italian Salad Dressing
- 1/4 cup cider vinegar
- 1/4 cup soy sauce
- 2 TB honey
Baked Fish Alaska

Preheat oven to 425. Put fish on a rimmed baking sheet sprayed with cooking spray
- 6 fish fillets, such as halibut, tilapia, mahi mahi
- 1/2 cup regular or light sour cream
- 1/3 cup grated Parmesan cheese
- 1/3 cup regular or light mayonnaise
- 1 TB lemon pepper
- Dash ground red pepper
- 1/2 to 3/4 cup panko bread crumbs
