Passover Carrot Kugel

- 10 10 10 carrots, cooked and mashed
- 3 3 3 large eggs
- 2 2 2 tablespoons oil
- 1/2 1/2 1/2 cup sugar
- 1/2 1/2 1/2 cup potato starch
- 1 1 1 teaspoon salt
- 1 1 1 teaspoon cinnamon
Passover Brownies

Mix sugar, butter, and cocoa together
- 1 c. granulated sugar
- 1/2 c. butter
- 1/4 c. cocoa
- 2 egg yolks
- 1/2 c. matzo cake meal
- 1/4 tsp. salt
- 1/4 c. chopped nuts
- 1/4 c. milk
- 2 egg whites
No-Peek Chicken & Rice Casserole

Put 1 cup uncooked rice in bottom of large casserole
- 4 chicken breasts
- 4 thighs or drumsticks
- 1 envelope Lipton Onion soup
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 soup can water
- 1 cup Uncle Ben's rice
- I sometimes substitute a can of cream of chicken soup for the cream of mushroom soup.
Honey Glazed Salmon

Preheat oven to 400* F. To make the browned butter lime sauce, melt butter in a medium saucepan over medium heat
- For the Browned Butter Lime Sauce:
- 4 salmon filets
- Kosher salt and freshly ground black pepper, to taste
- 4 tablespoons all-purpose flour
- 4 tablespoons honey
- 2 tablespons olive oil
- Zest of 1 lime
- 6 tablespoons unsalted bautter
- 2 cloves garlic, pressed
- 1 tablespoon honey
- Juice of 1 lime
- Kosher salt and freshly ground black pepper, to taste
Golden Corn Bread

Heat oven to 400*. Combine dry ingredients
- 1/4 cup vegetable shortening or oil
- 1 cup yellow corn meal
- 1 cup all-purpose flour
- 4 tablespoons sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg, beaten
Creamy Mashed Cauliflower

Steam cauliflower and garlic for 15 minutes or until tender; drain
- 5 cups cauliflower florets
- 1 1/2 qts. water
- 1 clove garlic (opt.)
- 1/4 cup Hellmann's Mayonnaise
- 1/4 tsp. salt
Coconut Passover Macaroons

- 1/3 1/3 1/3 cup sugar
