Crockpot Meal
- 12 chicken thighs(2 1/2-3 lbs.) skinless & boneless
- 2 14 1/2 oz. cans diced tomatoes
- 2 tblsp. quick cooking tapioca
- 1 tblsp. grated fresh ginger
- 1 tblsp. fresh cilantro
- 4 cloves garlic, minced
- 2 tsp. brown sugar
- 1/2 tsp. crushed red pepper
- 1/2 tsp. salt
- 3 cups cooked couscous

Preheat oven to 350*F. Mix together oil and eggs
- 1/2 cup oil
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt

- 1 15 oz. can black beans or great northern beans, rinsed & drained

- 1 10 oz. pkg. frozen corn
- 2 - 3 medium carrots, sliced
- 1 large onion, chopped
- 1 4 oz. can chopped green chili peppers, optional
- 6 vegetable boullion cubes
- 1 - 2 tsp. chili powder
- 2 cloves garlic, minced
- 1/3 c. flour
- 1/4 c. yellow cornmeal
- 1 tsp. baking powder
- dash salt & pepper
- 1 beaten egg white
- 2 tblsp. milk
- 1 tblsp. oil

- 2 cups flour
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 cup sugar

- 1 cup canned pumpkin puree
