Veggie Stuffed Shells

- 1 box (12 oz.) jumbo pasta shells
- 2 tsp. olive oil
- 1/2 bunch broccoli (7 oz.), chopped (2 1/2 cups)
- 1 cup shredded carrots (4 oz.)
- 1 small onion (4 oz.), chopped
- 1 clove garlic, minced
- 1 box (10 oz.) frozen leaf spinach, thawed and coarsely cut
- 1/4 cup chopped fresh basil (1 Tblsp. dry)
- 1 cup lowfat small-curd cottage cheese (2%) or part-skim ricotta
- 2 Tbsp. grated Parmesan
- 1/4 tsp. each salt and pepper
- 1 1/2 cups marinara sauce
- 1/2 cup shredded part-skim mozarella
Apple Cake

Sift together flour, baking powder, and 1 1/2 cups sugar
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 1/2 cups sugar
- 1/3 cup orange juice
- 2 1/2 teaspoons vanilla
- 4 eggs
- 1 cup vegetable oil
- 3 medium apples, thinly sliced
- 1 teaspoon cinnamon
- 1/2 cup sugar
Smoky Salmon Casserole

Per Serving: 470 cal
- 8 ounces dried bow tie pasta or penne (3 1/2 cups)
- 1 cup chopped red sweet pepper
- 1/2 cup chopped green onion
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground black pepper
- 2 1/2 cups milk
- 6 ounces smoked Gouda cheese, shredded
- 1/2 teaspoon finely shredded lemon pee1
- 1 4 1/2 ounce package smoked salmon, flaked with skin and bones removed
- 1 14 ounce can artichoke hearts, drained and quartered
- 1 cup soft bread crumbs or panko (Japanese-style bread crumbs)
- 1/4 cup pine nuts
- Freshly ground black pepper
Baked Carrots

- 1 1/2 lb. carrots, sliced
- 3 Tbsp. brown sugar
- Butter or margarine
- Nutmeg
Tuna Noodle Casserole

Drain Tuna. Combine with soup, water, salt, pepper, & peas
- 1 large can tuna, drained
- 1 package noodles, boiled
- 1/4 cup water
- salt
- pepper
- Shredded Cheddar Cheese
- Potato Chips, crushed, optional
- 1 small can green peas, optional
- 1 can Cream of Mushroom soup
- Can also add chopped onions or sliced mushrooms if desired.
- Can substitute Cream of Onion or Cream of Celery soup
Beef Enchiladas

In a large skillet cook ground beef, onion, and garlic until meat is brown and onion is tender
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 1/2 oz. can diced green chili peppers, drained
- 1 tablespoon chili powder
- 1/4 teaspoon ground cumin
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 8 corn or flour tortillas
- 2 14 oz. cans enchilada sauce
- 8 oz. pkg. shredded mild cheddar cheese
Noodle Kugel

Boil noodles. Mix rest of ingredients together and add to drained noodles
- Topping:
- 8 oz. noodles
- 1 large cream cheese
- 4 eggs
- 1 stick butter or margarine, melted
- 2 cups milk
- 1 tsp. vanilla
- 1 cup sugar or 6 tsp. sweet and low (9 packets)
- 2 cups corn flakes, crushed
- 1/2 cup sugar
- 1 Tblsp. cinnamon
Unstuffed Cabbage

- 3/4 cup uncooked, parboiled white rice
- 1 onion, finely chopped
- 2 egg whites, beaten
- 1/2 cup raisins (optional)
- 2 1/2 cups ginger ale
- 1 1/2 cups ketchup
- 1 can (8 oz.) tomato sauce
- 1/2 head (about 1 1/4 lb.) cabbage, chopped (8 cups), divided
Potato Kugel

Cook potatoes in water. Drain water and mash
- 8 medium potatoes, peeled and cut
- 2 eggs
- 4 medium onions, saute'd
- small amount of matzo meal
- salt and pepper to taste
Kale Salad

Wash and dry your kale. (Simply blot dry with paper towels, or use a salad spinner
- 1 head of kale
- 1 1/2 TBS grapeseed or olive oil
- 1 cup dried cranberries
- 1 cup shredded carrots
- 3/4 cup slivered almonds
- Salt & pepper
- Balsamic Lemon Vinaigrette
- 1/2 cup balsamic vinegar
- 1/4 cup grapeseed or olive oil
- 1 TBS fresh lemon juice
- Salt & pepper
- 2 teaspoons sugar (or honey)
