Simple Baked Potato Chips

Healthy Parmesan Garlic Crumbed Fish

Preheat grill/broiler on high (400 F)
- 2 firm white fish fillets (about 5 oz. ea.) skin off at room temperature
- 2 tsp dijon mustard
- Olive oil spray
- Salt and pepper
- 1/2 c panko breadcrumbs
- 1 tbsp finely chopped parsley
- 2 tbsp grated parmesan
- 1 minced garlic clove
- 1 tbsp olive oil
- Pinch of salt
Garlic Brown Sugar Glazed Salmon

Preheat oven to 350 degrees
- 2 pounds salmon
- 2 Tablespoons olive oil
- 1/4 cup brown sugar
- 1/4 soy sauce
- 3 garlic cloves minced
- juice of 1 lemon
- 1 teaspoon salt
- 1/2 teaspoon pepper
- garnish with sliced lemons and chopped parsley if desired
Black Beans and Rice

Heat the oil in a large pot over medium heat
- 1 tablespoon olive oil
- 1/2 cup finely diced onion
- 2 teaspoons minced garlic
- 1 1/2 cups uncooked long grain white rice
- 1 teaspoon ground cumin
- 3 cups chicken broth
- salt and pepper to taste
- 2 15 ounce cans black beans rinsed and drained
- 2 tablespoons lime juice
- 1/3 cup chopped
- cilantro leaves
- cilantro sprigs and lime wedges for garnish
Rice Casserole

Mix all ingredients together in a casserole dish
- 1 cup Uncle Ben's Rice
- 4 cups water
- 1 package Lipton dry onion soup
- 1 can mushrooms and juice
- 3/4 stick butter or margarine
Cinnamon-Apricot Glazed Salmon

Combine soy sauce, ginger, cinnamon sticks, apricot nectar, and sliced apricots in a saucepan and bring to a boil
- 2 tbsp. low-sodium soy sauce
- 1 tbsp. minced ginger
- 2 cinnamon sticks
- 12 oz. apricot nectar
- 8 dried apricots, sliced
- 4 salmon fillets (6 oz. each)

Saute' the vegetables until tender
- 1 small can mushrooms & juice
- 1/3 green pepper, diced
- 1 small onion, diced
- 1 lb. ground chuck
- 1/4 tsp. oregano
- salt & pepper to taste
- 1 can tomato soup
- 1/3 c. water
- 1 can tomato paste
- 1 tblsp. Worcestershire Sauce
- 8 oz. wide noodles, boiled & drained
- 1/2 c. grated Mozzarella Cheese
- I usually add some garlic powder with the oregano. I also sometimes skip the vegies when I'm in a hurry & just use some dry minced onion.
Sweet & Sticky Orange Chicken

- 1/4 cup whole-wheat flour
- 10 ounces raw boneless skinless chicken breast, cut into bite-sized pieces
- 1/4 cup fat free liquid egg substitute
- 1/4 cup fat-free chicken broth
- 1 tablespoon cornstarch
- 1 1/2 tablespoons low-sugar orange marmalade
- 1 1/2 tablespoons seasoned rice vinegar
- 1 tablespoon Splenda No Calorie Sweetener (granulated)
- 1 tablespoon reduced-sodium/lite soy sauce
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- Dash red pepper flakes
- 2 tablespoons chopped scallions
Broiled Salmon with Marmalade-Dijon Glaze

Preheat broiler. Combine first 6 ingredients in a small bowl, stirring well
- 1/2 cup orange marmalade
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground ginger
- 4 (6-ounce) salmon fillets
