Fried Mashed Potato Balls

Remove mashed potatoes from refrigerator and allow them to reach room temperature
- 3 cups cold leftover mashed potatoes
- 1/4 cup cooked bacon, chopped
- 2 slightly beaten eggs
- 2 tablespoons chopped fresh chives
- 1 cup shredded sharp cheddar cheese
- 1 1/2 cups dry bread crumbs
- 2 cups vegetable oil, for frying
Crispy Fresh Chicken

Mix together all the marinade ingredients, then marinate the chicken breasts for 10-15 minutes
- FOR THE CHICKEN MARINADE:
- 250 grams skinless boneless breast chicken (halved)
- 2-3 tablespoons fresh lemon juice
- 1 garlic clove (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- FOR THE BREADING OF THE CHICKEN:
- 2 eggs, lightly whisked (use egg whites if you wish to cut down on the calories)
- 1 cup Gold Medal all purpose flour (or as needed)
- 1/2 teaspoon salt
- A pinch of black pepper
- 1-2 cup dried breadcrumbs (or as needed)
- 1-2 tablespoon vegetable oil
Italian Ice

In two batches, combine watermelon, lemon and lime juice, and sugar in a blender and blend until smooth
- 1/2 seedless watermelon, cut into cubes
- 1 lime, juiced
- 1/2 lemon, juiced
- 1/4-1/3 cup sugar, or to taste (we use less sugar with really sweet watermelons)
Root Beer Float Cake

In a large bowl or mixer combine cake mix, 1 1/4 cups of root beer, oil and eggs

- 1 package of white cake mix
- 1 3/4 cup of root beer divided
- 1/4 cup of canola oil
- 2 eggs
- 1 envelope of powdered whipped topping mix
- (I used Dream Whip)
Creamy Cranberry Salad

In a large bowl, mix the first six ingredients until blended
- 3 cups fresh or frozen cranberries (thawed), chopped
- 1 can (20 ounces) unsweetened crushed pineapple, drained
- 2 cups miniature marshmallows
- 1 medium apple, chopped
- 2/3 cup sugar
- 1/8 teaspoon salt
- 2 cups heavy whipping cream
- 1/4 cup chopped walnuts
Avocado Deviled Eggs

Slice eggs in half, and scoop out yolks
- 10 hard-boiled eggs
- 1 ripe avocado
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 teaspoons lemon juice
- 1/2 cup cooked and crumbled bacon
- 1 jalapeño peppers, seeds removed, minced, optional
- 2 tablespoons fresh cilantro, minced
- 1/4 cup shallots, minced
Apple Strudel French Toast

[When ready, preheat oven to 350º F
- Topping:
- 9-12 thick slices day-old, white bread
- 4 eggs
- 1 stick unsalted butter, cut into pats and chilled
- 1 1/4 cup heavy cream
- 1 cup brown sugar
- 1 1/2 teaspoons cinnamon, divided
- 1 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 6 fuji/gala/granny smith apples, peeled and chopped
- 1/2 cup (1 stick) unsalted butter
- 1 cup brown sugar
- 2 tablespoons warm water
- 1 teaspoon cornstarch
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg

Fried Flounder

- 1 1/2 pounds boneless flounder or sole fillets, preferably 4 6-ounce pieces
- Salt and pepper
- 2 large eggs
- 1/2 cup milk
- 1/2 cup all-purpose flour for dredging
- Mild olive oil or vegetable oil for frying
- 4 tablespoons unsalted butter
- 1/3 cup finely chopped green garlic, both white part and tender green stalks
- Juice of 1/2 lemon
- 3 tablespoons chopped flat-leaf parsley

- 1/2 Cups Melted smart balance spread
- Or your choice of butter product
- 1 Greased baking dish( or 2)
