- 6 cups fresh broccoli florets
- 1/3 cup red onion, diced
- 1 cup celery, diced
- 2 cups seedless red grapes, halved
- 1 cup mayonnaise
- 1/3 cup sugar
- 1 tablespoon apple cider vinegar
- 8 slices bacon
- 1/2 cup slivered almonds

- 2-3 cups cooked chicken, cubed
- 1 (14 oz.) can cream of chicken soup
- 1 (10.75 oz.) can condensed cream of mushroom soup
- 1 (16 oz.) bag frozen peas and carrots
- 3/4 cup heavy cream
- 2/3 cup parmesan cheese, grated
- 1/2 cup cheddar cheese, grated
- 1/3 cup seasoned Italian breadcrumbs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon garlic salt
- kosher salt and freshly ground pepper, to taste
Tex Mex Hashbrown Casserole

Preheat oven to 350 degrees and lightly grease a 9x13-inch baking dish with non-stick spray
- 1 pound lean ground beef
- 1/2 cup green pepper, diced and divided
- 1/2 cup red pepper, diced and divided
- 1/2 cup corn
- 1 packet taco seasoning
- 1 can (10.5 ounces) condensed tomato soup
- 3 ounces cream cheese
- 1/2 cup onion, diced and divided
- 2 cups Mexican-style cheese, shredded and divided
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 30 ounces shredded hashbrown potatoes, thawed
Pasta Fagioli

Brown the beef and drain the fat……then put into crock pot with all other ingredients except the pasta
- 2 lbs. of ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks of celery, chopped
- 2 (28 ounce) cans diced tomato’s, undrained
- 1 (16 ounce) can red kidney beans, drained and rinsed
- 1 (16 ounce) can white kidney beans, drained and rinsed
- 3 (10 ounce) cans of beef stock
- 3 tsp. oregano
- 2 tsp. pepper
- 5 tsp. parsley
- 1 tsp. tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces of pasta
SLOW COOKER CHEESY GARLIC MASHED POTATOES

Take peeled potatoes and cut them into 1-inch pieces
- 2 pounds Yukon Gold potatoes, peeled
- 1/4 cup chicken broth
- 1/4 cup half-and-half
- 2 tablespoons cream cheese

- 1 frozen ready to bake pie crust {9", 5 oz. size, such as Kroger}
- 2-10 oz. packages frozen mixed berries {I used Simple Truth Organic brand}
- 1 teaspoon vanilla
- 1/2 cup granulated sugar
- 1/4 cup all purpose flour
- for the streusel topping:
- 1 cup all purpose flour, unbleached
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 cup rolled oats
- 6 tablespoons softened butter
- 1/4 teaspoon salt
Taco Stew

In a large pot add a drizzle of olive oil and place over medium heat
- 4 medium Russet potatoes, peeled and diced
- 3-4 carrots peeled and diced
- 1 onion chopped
- 1 pound hamburger
- 1 pkg. frozen peas (the small pkg.)
- 1 can (16 oz) tomatoes
- 1 8oz. can tomato sauce
- 1 pkg. taco seasoning or roughly 1/4 cup
- 1 can corn (undrained)
- 1 can chili beans (undrained)
- 1 can green beans (undrained)
- 1 can kidney beans (undrained)
Black Bean Quinoa Salad Recipe

Whisk together the olive oil, cumin, chili powder, garlic, lime juice, salt, and cayenne pepper Set aside
- 2 cups cooked quinoa (1 cup dried quinoa cooked in a rice cooker with 2 cups water)
- 1/2 cup extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 clove garlic, grated or finely chopped
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 15oz can black beans, rinsed and drained
- 1 cup frozen corn kernels
- 1 red bell pepper, roughly chopped
- 2 tomatoes, diced
- 6 green onions, root removed, white and green parts chopped
- 1/3 cup cilantro, roughly chopped
