Cowboy Beans

Penzey's Recipe
- 2 cups dried pinquito beans, picked over and soaked overnight(or pinto beans)
- 1 yellow onion, diced
- 2 garlic cloves, diced
- 3 whole TIEN TSIN CHILI PEPPERS
- 1/4 lb finely chopped bacon
- 1 14.5 oz can dices red tomatoes with juice plus 14.5 oz of water
- 1/2 tsp Beef Soup Base
- 1 tbsp BBQ or CHILI 3000
Stuffed Cabbage

1, Preheat oven to 350. Place cabbage head in large pot of boiling water for about 10-15 minutes to soften leaves
- 1 head of green cabbage
- 2 pounds ground beef
- 1 cup white rice, cooked
- 1 large can of sauerkraut
- 1 large can diced tomatoes, plus 1/2 can of water
- Salt and pepper to taste

- 2 c. Hy-Vee sugar
- 1 c. Grand Selections olive oil
- 3 Hy-Vee large eggs
- 2 tsp Hy-Vee vanilla
- 2 c. coarsely grated zucchini (about 1 large)
- 1 (8 oz) can Hy-Vee crushed pineapple, drained

- 1 lb lean beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 medium onions, coarsely chopped
- 10 oz fresh mushrooms, sliced
- 3 large carrots, sliced
- 1/2 cup pearl barley
- 7 cups beef broth (or 7 cups water plus 2 tbsp beef soup base)
- 1 cup dry red wine or no salt added tomato juice
- 1-2 tsp sale (to taste)
- 1/2 tsp freshly ground pepper
- 1 cup frozen green peas
- 2 tsp fresh lemon juice
Reuben Casserole

The wonderful flavors of a classic Reuben sandwich in a handy, portable casserole
- 16 oz. sauerkraut, rinsed and drained well
- 1/2 -1 tsp. WHOLE CARAWAY SEED
- 12 oz. corned beef, shredded or cubed
- 2 Cups shredded Swiss cheese
- 1/2 Cup light mayonnaise
- 1/2 Cup 1000 Island dressing
- 2 slices homemade rye bread, dried and made into bread crumbs (about 1 1/2 cup crumbs)
- 3 TB. butter, melted
Home Made Belgian Waffle Mix
