- 2 cups butter
- 2 cups sugar
- 2 cups brown sugar
- 4 eggs
- 2 tbsp vanilla
- 4 cups flour
- 3 cups blended oatmeal (measure and blend to a fine powder in a blender)
- 1 tsp salt
- 1 tsp baking powder
- 2 tsp baking soda
- 24 ounces chocolate chips
- 18 ounce grated Hershey bar
- 3 cups chopped nuts

- 2 Tbs. unsalted butter
- 1/2 lb. zucchini, cut into 1/8-inch slices
- 1 red onion, finely chopped
- 1 tsp. chopped fresh tarragon

In a medium saucepan, bring the vegetable stock to a simmer
- 6 cups vegetable stock, recipe follows
- 1/4 cup olive oil
- 1 cup finely chopped onions
- 1/2 cup finely chopped yellow bell pepper
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped celery
- 1 tablespoon minced garlic
- 2 cups whole grain farro (or spelt), picked over for impurities and rinsed
- 2 cups diced tomatoes
- 2 cups quartered cremini mushrooms
- 1/4 pound okra, halved lengthwise
- 1/4 pound whole baby carrots, tops removed and scrubbed
- 1 small zucchini, sliced into 1/2-inch thick half circles
- 1 bay leaf
- 1 tablespoon chopped fresh thyme leaves
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley leaves

- 1 1/2 cups white-long rice
- 2/3 cups wild rice
- 1/2 pound snow peas, cut in half crosswise
- 3 tbsp balsamic vinegar

- 1 package (14 ounces) light or turkey kielbasa, sliced on the diagonal

Chicken Enchiladas Rojas

Dinah Shore Recipe You can cut sauce in half or freeze what you don't use
- Enchilada Sauce:
- 2 small onions, chopped fine
- 2 tbsp oil
- 16-oz can chopped tomatoes
- 2 cups chicken broth, low sodium
- 4 8-oz cans Mexican tomato sauce or regular
- 4 10-oz cans enchilada sauce
- 3 10 3/4-oz cans tomato soup
- salt & pepper to taste
- 1/2 tsp sugar
- 1 8-oz can Salsa of choice
- Saute onions in oil until golden. Add tomatoes, chicken broth, tomato sauce, enchilada sauce and tomato soup. Season with salt and pepper, sugar and salsa. Let simmer for one hour.
- Chicken: 1 roasted whole chicken from Costco. Remove meat from (remove skin) chicken and chop.
- Filling Ingredients:
- 4 cups grated cheddar/Monterey Jack cheese
- 12 green onions, chopped
- 16-oz cans of chopped black olives
- 30 corn Torillas
