Louisiana Creole Rice

In a medium saucepan, add broth, tomato sauce, onion, bell pepper, garlic, thyme, and black pepper
- 1 can (14 1/2 oz.0 reduced-sodium vegetable broth or chicken broth
- 1 can (8 oz.) reduced-sodium tomato sauce
- 1 medium yellow onion, finely chopped (about 1 cup)
- 1 medium green bell pepper, finely chopped (about 1 cup)
- 1 clove garlic, minced
- 1/4 tsp. dried thyme
- 1/4 tsp. freshly ground black pepper
- 1 cup long-grain white rice
Philly Cheesy Chili Dip w/Ritz Crackers

Spread cream cheese onto bottom of microwaveable pie plate; top with chili and cheddar cheese
- 1 pkg. (8 oz.) cream cheese, softened
- 1 can (15 oz.) chili
- 1/2 cup shredded cheddar cheese
- 2 tbsp. chopped cilantro
Barbeque Green Beans

Be sure to drain the water from the beans
- 4 cans cut green beans
- 6 - 8 slices bacon, cooked and chopped
- 1 small onion, chopped
- 1 cup ketchup
- 1 tsp. worcestershire sauce
- 1/4 cup sugar
Chinese Egg Rolls

Brown pork or chicken with ginger and garlic in pan; drain off any grease
- 12 egg roll wraps
- 1/2 to 1 lb. pork or chicken
- 2 tsp. chopped fresh ginger
- 2 garlic cloves, minced
- 1 tsp. salt
- 1 tsp. sugar
- 1/4 cup soy sauce
- 1 tsp. sesame oil
- 16 oz. bag shredded cabbage and carrot coleslaw mix
- 4 green onions, sliced
- 1 egg beaten with 1 tsp. water
- oil (for frying)
Bacon & Cheddar Mashed Potatoes

Cover potatoes with water in a large saucepan
- 1 1/2 lbs. potatoes, quartered
- 1/2 cup miracle whip or miracle whip light dressing
- 1/2 cup milk
- 6 slices bacon, crisply cooked, crumbled
- 1/4 to 1/2 tsp. garlic powder or 3 cloves garlic, minced
- salt to taste
- pepper to taste
- 1 cup shredded mild cheddar cheese
Turkey Chili

Spray a large pot with cooking spray, turn heat to medium-high and add diced onion and minced garlic
- 1 lb. lean, ground turkey
- 1 small onion, diced
- 1 tsp. minced garlic
- 1 28 oz. can diced tomatoes
- 1 14 oz. can kidney beans, drained and rinsed
- 4 tbsp. chili powder
- 2 tbsp. cumin
- salt to taste
- pepper to taste

Stuffed Peppers

Brown onion and ground beef in a skillet
- 3 medium green peppers
- 1 lb. lean ground beef
- 1 tbl. onion, chopped
- 1 tbl. green pepper, choppped
- 1 can tomato sauce (8 oz.) (reserve 3 tbls for top of stuffed peppers.)
- 1/2 cup minute rice, uncooked
- 2 small whole tomatoes, skinned and quartered
- 1/2 cup water
- salt and pepper
Oil-Free Italian Vinaigrette

Combine all ingredients in a covered jar and shake well
- 1/4 cup cider vinegar
- 3/4 cup cold water
- 3/4 tsp. salt
- 1/4 tsp. black pepper
