Unstuffed Cabbage Rolls

In a large skillet, heat olive oil over medium heat
- 1 1/2 to 2 lbs. lean ground beef
- 1 tbsp. oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small cabbage, chopped
- 2 cans (14.5 oz. each) diced tomatoes
- 1 can (8 oz.) tomato sauce
- 1/2 cup water
- 1 tsp. ground black pepper
- 1 tsp. sea salt
French Dressing

Mix all ingredients together
- 1 cup salad oil
- 3/4 cup sugar
- 1 cup vinegar
- 1 cup catsup
- 1 large onion, diced
- 1/2 green pepper, diced
- 1 tsp. paprika
- 1 tsp. dry mustard
Dilled Chicken Spread

Combine all ingredients. Serve with crackers or melba toast
- 1 cup chunk chicken, drained
- 1/4 cup mayonnaise
- 1 tbsp. chopped green onion
- 2 tsp. prepared mustard
- 1/4 tsp. dried dill
- dash of pepper
Pizza Dip

Take your cream cheese and Italian seasoning and mix together
- 8 oz. cream cheese
- 1 tsp. Italian seasoning
- 2 cups shredded mozzarella cheese
- 3/4 cup parmesan cheese
- 8 oz. jar pizza sauce
Country Bacon Potato Salad

Mix potatoes, bacon, green pepper and onion in a large bowl
- 1 1/2 lbs. quartered cooked new potatoes
- 6 slices bacon, crisply cooked, crumbled
- 1/2 cup chopped green pepper
- 1/2 cup chopped onion
- 1 cup salad dressing
- salt to taste
- pepper to taste
Tuna Salad

Toss together tuna, bell pepper, onion and celery
- 2 6 oz. cans tuna, drained
- 1 red bell pepper, finely chopped
- 1/2 red onion, finely chopped
- 2 stalks celery, finely chopped
- 1/2 cup fat-free mayo, or to taste
- 1/2 cup fat-free greek yogurt, or to taste
- 1 tbsp. dill pickle or sweet pickle relish
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 4 slices tomato
- 2 pieces whole-wheat pita bread, cut in half
Penne Pasta with Chicken (served hot)

Cook pasta according to package directions
- 1 pkg. wheat penne pasta
- 2 - 3 tbsp. olive oil
- 1 yellow pepper
- 1 onion
- 1 garlic clove, chopped
- 1 jar (about 26 oz.) spaghetti sauce
- 3 grilled or cooked boneless, skinless chicken breasts, sliced
- 1 tbsp. chopped fresh parsley or basil
Grilled Three-Cheese Potatoes

Add cubed ham to this dish and you can serve it as a full meal main dish
- 6 large potatoes, sliced 1/4" thick
- 2 medium onions, chopped
- 1/3 cup grated parmesan cheese
- 1 cup (4 oz.) shredded sharp cheddar cheese, divided
- 1 cup (4 oz.) shredded mozzarella cheese, divided
- 1 lb. sliced bacon, cooked and crumbled
- 1/4 cup butter, cubed
- 1 tbsp. minced fresh or dried chives
- 1 to 2 tsp. seasoned salt
- 1/2 tsp. pepper
- nonstick cooking spray
Ham and Egg Fried Rice

- 2 large eggs, lightly beaten
- 3 1/2 to 4 tbsp. corn or peanut oil
- 3 1/2 cups cold cooked rice
- 2 to 3 oz. honey or sugar-cured ham, about 1/2 cup cubed ham
- 1/2 cup fresh or frozen peas
- 1 to 1 1/4 tsp. coarse kosher salt
- 3 tbsp. green and white scallions
