Oven Roasted Potatoes (Olive Garden)

I made some of my own adjustments to the original recipe
- 4 medium baking potatoes (or red potatoes, 2-3 pounds), cut into 1-inch chunks
- 4 large carrots, cut into 1-inch chunks (not in original recipe)
- 1 medium green pepper (I prefer using only red peppers)
- 1 medium red pepper
- 1 onion, chopped coarsely (not in original recipe)
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1 teaspoon fresh garlic, minced (4 cloves)
- 1/2 teaspoon pepper, to taste
- 2 teaspoons fresh rosemary, chopped (I use 1-2 tsp each dried oregano & basil)
- 4 teaspoons fresh parsley, chopped (I omit)
- 1/2 cup Romano cheese grated (I omit for dairy-free)

- 1 1/2 cups raw cauliflower (160g)
- 1/4 tsp garlic powder, or 2 tsp minced
- 1/4 to 1/2 tsp salt (depending on your taste preference for salt – I like 1/2 tsp)
- 2 tbsp butter spread of choice, such as Earth Balance or Smart Balance Light (or sub 2 tbsp olive oil and a little extra salt if needed) (30g)
- 1 cup milk of choice (240g)
- optional: 1/2 cup of either of the following: nutritional yeast or mozzarella-style shreds (such as Daiya)
- optional: Add a little Dijon mustard or lemon juice if desired. Or sometimes I add dried oregano or rosemary.
Maple-Bacon Roasted Sweet Potatoes

- 4 cups peeled sweet potatoes (about 3-4 medium), cut into 1/2 -inch cubes
- ½ cup thinly sliced red onion (about ½ medium)
- 1 tsp. coconut, avocado or olive oil
- 2 tsp. maple syrup
- 2 slices thick-cut bacon, uncooked, sliced or chopped

1. Melt chocolate chips in the a small microwave safe bowl, on high power, in the microwave for 1 minute
- 1/4 cup vegan dark chocolate chips
- 1/2 cup green banana flour {i.e. Let's Do Organic Green Banana Flour}
- 1/2 cup chopped pecans
- 1/4 cup unsweetened cocoa
- 2 tablespoons pure maple syrup, or to taste*
- 2-3 tablespoons almond milk, or other non-dairy milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
Tandoori seasoning

Mix together. Not sure how this will turn out, but will try it in Tandoori Chicken Recipe
- 2 tsp garlic powder
- 2 tsp paprika
- 1 tsp ginger
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground cloves (or allspice)
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp chili powder (or 1/2 tsp ground red pepper)
- 1/2 tsp freshly ground black pepper
Lemon Blueberry GF Cupcakes

- Artisan Gluten-free Flour Blend (3 cups):
- 3/4 cup salted butter (1 1/2 sticks), softened
- 1 3/4 cup sugar (try sub. Xylitol)
- 1 tsp GF pure vanilla extract
- 2 large eggs, room temperature
- 2 large egg whites, room temperature
- Zest from 1 lemon
- 1/4 cup lemon juice (about 1 lemon, juiced)**see note
- 6 Tbsp Buttermilk, room temperature (try sub. non-dairy milk + 1/2 T white vinegar)
- 2 1/2 tsp GF Baking Powder
- 1 tsp GF Baking Powder
- 2 tsp Xanthum gum (or Guar)
- 1/2 tsp Salt
- 1 1/4 cups Brown Rice Flour
- 3/4 cup Sorghum Flour (or sub. Brown Rice flour=2 cups total)
- 1/2 cup Arrowroot flour/starch (or cornstarch)
- 1/3 cup Tapioca flour/starch (or 1/4 cup potato starch + 1 T potato flour)
- 1 tsp Xanthum gum (or Guar)
- 1/2 pint (1 cup?) fresh blueberries (frozen can be used)
- BLUEBERRY BUTTERCREAM:
- 1 1/3 cups + 1 Tbsp Sugar, divided (try sub. Xylitol)
- 1/2 cup water
- 4 large Egg Whites
- 1/4 tsp salt
- 1 1/2 cups salted butter (3 sticks), removed from refrig. when you start the buttercream
- 2 tsp GF pure vanilla extract
- 1 pint fresh blueberries, pureed
- 24 fresh blueberries for garnish
(Paleo) Chocolate Orange Truffles

- Base:
- 2 Tbs coconut oil
- 3 Tbs coconut butter
- 2 Tbs almond butter
- 1/2 tsp vanilla extract
- Flavor:
- 2 Tbs unsweetened cocoa powder
- 2 tsp maple syrup
- Zest of 1 orange (1 tsp set aside for the coating)
- 2 Tbs shredded coconut (for the coating)

- 1 tbsp flour of choice (or protein powder)
- 1 tbsp cocoa powder
- 1 tsp instant coffee powder, such as Mt. Hagen (decaf or regular)
- 1 cup shredded, unsweetened coconut (not low-fat)
- 1/2 cup plus 2 tbsp milk of choice or canned coconut milk
- 3 tbsp agave or pure maple syrup
- pinch stevia or 1 more tbsp agave or maple syrup
- 1/4 tsp pure vanilla extract
- just over 1/16 tsp salt

- 1 tsp kosher salt

- 2 cups water
- 1 lb lean ground beef*

- 1 Tbsp worcestershire sauce
- 1 egg
