- 1 medium/large ripe banana, peeled (approx 3/4 cup )
- 1 large egg
- heaping 1/2 cup creamy peanut butter (*I use crunchy Adams peanut butter)
- 1 /3 cup unsweetened natural cocoa powder
- 3 tablespoons honey or maple syrup (*I use 1 heaping Tbsp THM Super Sweet + 3 Tbsp water)
- 1 tablespoon vanilla extract
- 1 /4 teaspoon baking soda
- pinch salt, optional and to taste
- 1/2 cup mini semi-sweet chocolate chips + more for sprinkling muffin tops (*I don't sprinkle any on top)

Choco Chip Pumpkin Muffins (THM-S)

Preheat oven to 350 degrees and spray a 12-cup muffin tin with coconut oil cooking spray
- 3 large eggs
- 1/2 cup egg whites
- 3/4 cup canned pumpkin puree
- 3 Tablespoons melted coconut oil or butter
- 1 teaspoon pure vanilla extract
- 1/3 cup unsweetened nut milk (or water)
- 1/2 cup Gentle Sweet (or 3 Tablespoons Super Sweet Blend)
- 1/8 teaspoon Pure Stevia Extract Powder
- 1.5 cups THM Baking Blend
- 1.5 teaspoons aluminum-free baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice (Or, use 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon cloves)
- 1/4 to 1/3 cup Trim Healthy Chocolate Chips (You can use any other stevia-sweetened chocolate chips, if desired, or chopped 85% chocolate.)

Combine soup, milk and pepper in a 1 1/2 -quart baking dish; stir until blended
- LARGE BATCH VARIATION:
- 1 can (10 3/4 ounces) CAMPBELL'S® Cream of Mushroom Soup
- 3/4 cup milk
- 1/8 teaspoon black pepper
- 2 packages (9 ounces each) frozen cut green beans, thawed* (4 cups)
- Or 2 cans (14 1/2 ounces each) cut green beans, drained.
- 1 1/3 cups FRENCH'S® French Fried Onions, divided
- 2 cans or 1 XL can CAMPBELL'S® Cream of Mushroom Soup
- 1 cup milk
- 1/4 teaspoon black pepper
- 48 oz frozen cut green beans, thawed or pre-cooked*
- Or 6 cans green beans, drained

- 1/8 tsp pure vanilla extract
- 1/4 tsp plus 1/8 tsp pure peppermint extract
- stevia or powdered sugar (try 1 tbsp powdered sugar or a pinch pure stevia)
- 1/8 tsp spirulina or a few drops green food coloring (I used spirulina)
- optional: chocolate chips or mini chocolate chips
- (You could always try soaked and blended cashews (blend with a little water). Use an equal amount to the coconut cream called for in the recipe.)
