Cashew Cream

- Sweet cream:
- 1 cup raw cashews or macadamia nuts (120g)
- 1/3 cup to 3/4 cup water, depending on how thick you want your cream (For homemade cashew milk, use 3 cups water)
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 3 dates
- 1 dropperful english toffee stevia

Homemade Shake-and-Bake Chicken from 365 Ways To Cook Chicken Copyright 1986 Preheat oven to 375 degrees
- 1/2 cup flour
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon freshly ground pepper
- >4 chicken legs and thighs--I used a whole chicken cut up
- 1/2 cup milk

1. In a food processor, using the grating blade, shred carrots

- 1/2 cup Grade B Maple Syrup

- 1/2 cup crushed pineapple, drained (120g)
- 1/2 cup mashed banana (120g)
- 2 tbsp milk of choice (30g)
- 2 tsp pure vanilla extract
- 2 tsp white or apple cider vinegar
- 3 tbsp vegetable or coconut oil (30g)
- 1 cup spelt or all-purpose or Bob’s gf flour (135g)
- only if using the gf flour, add 1/4 tsp xanthan gum
- 1/2 tsp plus 1/8 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/3 cup xylitol or sugar of choice (65g)
- pinch stevia or 1 extra tbsp sugar of choice
- 1/3 cup finely-chopped pecans, optional

- 2 T. mustard (gluten free)
- 1/2 tsp. dried sage

- Yogurt Frosting:
- 1 (15-oz) can black beans, drained and rinsed well
- 1/2 cup quick-cooking oats
- 1/3 cup pure maple syrup
- 1/4 cup vegetable oil or melted coconut oil
- 2 Tbsp cacao powder or unsweetened cocoa powder
- 2 1/2 tsp pure vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/16 tsp pure stevia extract, or 2 Tbsp granulated sugar of choice
- 1/2 to 2/3 cup chocolate chips, plus more for topping the brownies if desired
- 1/2 cup plain yogurt (I like SoDelicious cultured coconut milk)
- 1/4 cup melted coconut butter
- 2 Tbsp powdered sugar (or Healthier Powdered Sugar--see note below)
- 1/4 tsp pure peppermint extract

Blend all ingredients—either with a hand blender or in a blender or Vitamix—until completely smooth
- 1 cup milk of choice
- 2 tsp Dutch cocoa powder
- 1 tbsp chocolate protein powder of choice
- 1 overripe frozen banana
- 1/16 tsp salt
- 1/4 tsp pure vanilla extract
- optional sweetener (I didn’t need any, but it depends on your protein powder)
- optional 1-2 tbsp nut butter of choice
- KKC Note-I’ve not tried this recipe with non-Dutch cocoa powder, but you can always experiment
Crockpot Pineapple Pulled Pork

1. Spritz your crockpot with a little cooking oil
- 1 pork shoulder (3-4 pounds)
- 1 can chunk or crushed pineapple, drained
- 1/2 c tamari or coconut aminos
- 2 t garlic powder
- 1 T chili powder
- 2-3 fresh jalapenos, chopped (KC: I'll leave these out)
- salt to taste

- 1/2 t Sea Salt (optional)
- Chef’s Note: If using soaked, dehydrated (dried) almonds, you may need to add a little oil. This recipe requires the use of completely dry almonds.(KC: Or roast them 375 for 5 minutes before using)
