Vegan Marshmallow Fluff (meringue) ~Chocolate Covered Katie

Open the can of beans and drain just the watery part into a stand mixer or a large mixing bowl
- 1 (15oz) can chickpeas or white beans, with or without salt
- 1/3 cup honey or agave OR 1/2 cup fine sugar (vegans: use the non-honey options)
- optional pinch cream of tartar, for stabilization
- feel free to add a little pure vanilla or almond extract
Chocolate Chip Banana Bread Pudding

Preheat oven to 350F (177C)
- 2 1/2 cups (640ml) milk of choice
- 3 tbsp (45ml) arrowroot or cornstarch
- 1/4 cup (60ml) sucanat or sugar of choice
- 1/3 cup (80ml) pure maple syrup
- 1 tbsp pure vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 5 cups day-old bread, torn into 1-to-2-inch pieces, lightly packed
- 2 extra-ripe bananas, peeled and sliced
- 1/2 to 1 cup (120-240ml) chocolate chips
Smokey Bacon Chicken Thighs (Paleo)

1. Preheat oven to 375F. 2
- Spice Blend:
- 16 Chicken Thighs (skin removed)
- 16 slices Bacon
- 1 Tbsp Chipotle Powder, or to taste
- 1 Tbsp Smoked Paprika
- 1 Tbsp + 1/2 tsp Onion Powder
- 1/2 tbsp Cinnamon
- 1 Tbsp Smoked Sea Salt
- 1/2 Tbsp Fresh Ground Black Pepper
- 1/2 tsp Cumin
- 1/2 tsp Garlic Powder
How To Cook Spaghetti Squash

Carefully cut the spaghetti squash in half, lengthwise
- 1 large spaghetti squash
- optional olive oil, salt, etc.
- sauce or seasonings as desired
- Note: Larger spaghetti squashes tend to yield sweeter strands. However, small ones will also work if they are all you can find.

- Single Serving adaptation by Kathy:
- 1/4 cup chia seed
- 1/4 cup golden flax seed meal
- 1/4 cup finely shredded unsweetened coconut
- Sweetener to taste (my preference is a little Stevia and a bit of Truvia for a large batch, only Stevia for small ones)
- 1 cup hot water
- 3 oz. blueberries
- 3 oz. blackberries
- 1/4 cup unsweetened coconut milk
- 2-3 oz. Strawberries
- 1/8 cup chia seed
- 1/8 cup golden flax seed meal
- 1/8 cup finely shredded unsweetened coconut
- 1/2 cup hot water
- 5 drops Vanilla Stevia, or to taste

Crock Pot BBQ Pork

Family favorite. Serve on brown rice or rolls/buns
- Barbecue Sauce:
- 4-6 pound Pork Roast
- 1/2 cup water (can also add liquid smoke, 1-2 Tbsp or to taste)
- Salt, Pepper, paprika, garlic powder, to taste
- 3 cup Ketchup
- 1 cup brown sugar
- 2 Tbsp liquid smoke (or Worcestershire sauce)
- 2 tsp garlic powder
- 1-2 tsp salt
- 1 tsp black pepper
- 1/4-1/2 cup chopped onion
- Note: My simpler version is just the ketchup, brown sugar and liquid smoke.

- 1 4-serving-size package instant butterscotch pudding mix
- 1 cup water
- 1/2 cup cooking oil
- 4 eggs
- 1/2 cup chocolate-flavored syrup
- Glaze:
- 2 ounces sweet baking chocolate, cut up (*German Chocolate)
- 2 tablespoons butter or margarine
- 3/4 cup sifted powdered sugar
- 1 tablespoon hot water
