Poppy Seed Poundcake Muffins

This is very similar to the recipe I have from years ago
- 2 cups all-purpose flour
- 1 tablespoon poppy seeds
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter
- 1 cup granulated white sugar
- 2 large eggs
- Zest of one lemon (I substitute 1 tsp lemon extract)
- 1 cup plain yogurt or sour cream (do not use non fat yogurt or sour cream)
- 1 teaspoon pure vanilla extract
- Lemon Glaze: (optional)
- 1/2 cup confectioners sugar (powdered or icing sugar)
- 2 tablespoons fresh lemon juice
- Note: Lemon zest is the yellow outer skin of the lemon that contains the fruit's flavor and perfume.

- 1 med. orange
- 1/4 c fresh or frozen cranberries
- 1 c almond milk (subst. coconut milk)
- 1/2 scoop Whey Protein Powder (subst. other protein powder)
- 1/2 c 0% Greek yogurt (subst. coconut milk)
- pinch Celtic sea salt
- 3 doonks THM stevia
- 1 tsp Vitamin C powder
- 1-2 tsp chia seeds
- splash vanilla
- dash nutmeg
- 1/2 tsp Pure orange extract or 3 drops orange essential oil
Turkey Meatballs

Preheat oven to 350 degrees
- Italian:
- 2 pounds Ground Turkey (or chicken)
- 1/2 cup onion, finely chopped
- 3-4 garlic cloves, minced
- 1 tsp salt
- 2 tsp Basil, or to taste
- 2 tsp Italian Seasoning, or to taste
- 1 egg
- Swedish:
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp sage
- (or 1 tsp allspice instead of other 3)
- Chili spiced:
- 2 tsp chili powder, or to taste
- cumin, optional
- cayenne pepper, optional
Healthy No-Bake Oreo Cookie Pie-Chocolate Covered Katie

In a bowl, cover the cashews with water and let sit at least 3 hours, no longer than 8
- Chocolate Pie Crust(gluten-free)--Doubled:
- 1 cup raw cashews or macadamia nuts (120g)
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 3/4 cup water
- sweetener of choice (such as: pinch stevia extract, or 1/2 cup dates, or 3 tbsp pure maple syrup or powdered sugar)
- 4-6 oreo cookies (or Healthy Oreos--see recipe for No-Bake Oreo Cookies)
- 4 tbsp cocoa powder (or cacao powder)
- 1 cup raw cashews (or almonds, walnuts, pecans, or macadamia nuts)
- 1 cup shredded coconut (unsweetened)
- 1/4 tsp salt
- scant 1 cup pitted dates (16 small dates)
- If you’d prefer, a store-bought crust will also work.
- (Less healthy option: 26 crushed Oreos + 1/4 cup butter or coconut oil)

The cookies are super soft, tender, slightly chewy, and are for true chocolate lovers
- 3/4 cup unsalted butter, softened (1 1/2 sticks)
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 packet instant chocolate pudding mix, about 3.7 to 3.9 ounces (not sugar-free and not 'cook & serve')
- 1/4 cup unsweetened natural cocoa powder
- 2 cups all purpose flour
- 1 teaspoon baking soda
- pinch salt, optional and to taste
- 1 cup semi-sweet chocolate chips
- 5 ounces dark chocolate, chopped (I used Trader Joe's 72% Pound Plus Bar)
