Honey Glazed Salmon

Gluten free and the browned butter lime sauce is to die for
- For the browned butter lime sauce:
- 4 salmon fillets
- Kosher salt and fresh ground pepper
- 4 T flour
- 4 T honey
- 2 olive oil
- zest of a lime
- 6 T unsalted butter
- 2 cloves garlic, pressed
- 1 T honey
- Juice of 1 lime
- Kosher salt and ground black pepper to taste
Green Bean Casserole with Fried Leeks

This casserole is a better version than the traditional green bean casserole
- 2 T butter
- 2-8oz pkgs sliced fresh mushrooms
- 1 teas dried thyme
- 2 shallots, finely chopped
- 1/2 c Madeira (I used dry sherry)
- 1 c whipping cream
- 1 1/4 lbs fresh green beans, trimmed
- 2 large leeks, cleaned and thinly slice crosswise
- Vegetable or peanut oil
- salt to taste
Mexican Pizza

A great twist on pizza with a Mexican flair
- 1 1/2 c Bisquick
- 1/2 c cornmeal
- 1/2 c cold water
- 1 lb ground beef
- 1-4 oz green chilies, seeded and chopped
- 1 1/4 oz taco seasoning mix
- 3/4 c water
- 1-16 oz refried beans
- 1 1/2 c shredded cheddar cheese
- 1 c shredded lettuce
- 2 tomatoes, chopped
- 1/2 c chopped onion
Creamy chicken and potato soup

A great chicken soup which is more like a stew
- 1/3 c butter
- 1 medium onion, diced
- 3 celery stalks, diced (about 2 cups)
- 2 carrots, diced (about 2 cups)
- 1/3 c flour
- 4 c chicken broth
- 1 1/2 teas salt
- 1 teas pepper
- 1 teas thyme
- 1 teas garlic powder
- 3-4 medium potatoes, peeled and diced
- 3 chicken breasts
- 1 c half and half
Pumpkin seed brittle

Use seeds from a pumpkin or any other squash such as acorn, butternut or hubbard
- 1 cup fresh seeds, separated and washed
- 4 T butter, plus more for baking sheet
- 1/4 c honey
- 1/2 c packed brown sugar
Pickled Coleslaw

- Sauce:
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1/2 of a red onion sliced
- 1/2 head of red cabbage sliced
- 1 1/2 c cider vinegar
- 2/3 c sugar
- 1 c water
Sweet and Sour Chicken

This is an easy way to make sweet and sour chicken without the mess
- 1 Reynold's cooking bag
- 2 T flour
- 1/4 c brown sugar
- 1/4 c vinegar
- 2 T soy sauce
- 1-20 oz can pineapple chunks in juice, drained
- 1 medium green pepper
- 4 boneless chicken breasts
Minestrone soup

A great minestrone soup with Italian sausage in it
- 1 lb Italian sausage
- 1 T olive oil
- 1 c diced onion
- 1 clove garlic, finely mined
- 1 c slice carrots
- 1 teas crumble basil
- 2 small zucchini, sliced
- 1-1 lb Italian pear tomatoes, chopped and undrained
- 2 can 10 3/4 oz beef bouillon or 3 beef bouillon cubes plus 1 1/2 c hot water
- 2 c finely shredded cabbage
- 1 teas salt
- 1/4 teas pepper
- 1-1 lb can great northern beans, undrained
Chicken or Turkey Enchilada Bake

- 2 T butter
- 1/2 c chopped onion
- 1 clove garlic, minced
- 1/2 c ripe olives, sliced
- 1-4 oz can diced green chilies, drained
- 1/4 c milk
- 1/2 c sour cream
- 1-10 3/4 oz cream of chicken soup
- 1 1/2 c chicken or turkey shredded
- 1 c shredded cheddar cheese
- 8 flour tortillas
Crescent Snacks

- 3 tubes Pillsbury crescent rolls
- 2-8 oz cream cheese
- 2 -Ranch dip mix
- assortment of veggies cut up into small pieces for topping(broccoli, cauliflower, carrots, olives etc)
