Scones that you can make with different dried fruits
- 2 c flour
- 6 T cold butter, cut in small pieces
- 3 T sugar
- 2 teas baking powder
- 1/4 tsp salt
- 1/2 c dried cherries, coarsely chopped
- 1/2 c dried apricots, chopped
- 2 large eggs
- 1/2 c 1% lowfat milk
- 3 T slivered almonds, optional
Potato Crust Vegetable Pizza

A gourmet pizza with a crust of shredded potatoes and topped with vegetables
- 1 bag shredded hash brown potatoes, thawed about 3/4 of the bag
- 1 small onion
- 1 egg yolk, beaten
- 2 teas flour
- dash salt
- 6 teas olive oil
- 1 c thinly sliced zucchini
- 1 c thinly sliced yellow summer squash
- 1/2 c chopped yellow sweet pepper
- 1 small red onion, halved and thinly sliced
- 1 clove garlic, minced
- 8 cherry tomatoes, quartered
- 1/2 of a 5.3 oz pkg soft goat cheese (chevre)
- 3/4 c shredded mozzarella cheese
- 1 T shredded fresh basil
Denver Omelet

A easy way to make a omelet in the oven for brunch or breakfast
- 8 eggs
- 1 c milk
- 1/2 teas seasoned salt
- 2 c hash browns
- 1 c diced ham
- 1 c cheddar cheese
- You can even add green pepper chopped.
Zesty Shrimp and Pasta

- 8 oz. linguine, uncooked
- 3/4 c Kraft Light House Italian Reduce Fat Dressing, divided
- 2 c fresh sliced mushrooms
- 1 small onion, thinly sliced
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 lb uncooked cleaned large shrimp
- 1 T chopped fresh parsley
- 1/4 c Parmesan cheese
- Note: You can substitute 1 large red pepper for the artichokes.
Eggplant Casserole

- 1/2 lb ground beef
- 1 medium onion, chopped
- 1 c chopped celery
- 1 1-lb can Lima beans, drained
- 1 1-lb can kidney beans, drained
- 1 1-lb pork and beans with tomato sauce
- 1 T Worcestershire sauce
- 1/2 c packed brown sugar
- 3/4 c catsup
- 1/4 c grate cheese, optional
