  • 1/4 teas salt
  • 1/4 teas pepper
  • 2 medium potatoes, peeled and cubed
  • 2/3 cup thinly sliced carrots
  • 1/2 c chopped onion
  • 2-17 oz pkgs refrigerated cooked beef roast au jus
  • 1 c half and half
  • 1/4 c flour
  • 3/4 c frozen peas

  • 1/4 c fresh orange juice (from 1 orange)
  • 5 garlic cloves, finely chopped

  • 1 T Dijon mustard
  • Coarse salt and freshly ground pepper
  • 1/4 c extra-virgin olive oil
  • 1 1/4 lb pork tender, cut into 11/2 inch cubes.

  • 1-4 lb eye-of-round-roast

  • 1 1/2 T prepared horseradish
  • 2 teas Dijon mustard
  • For horseradish sauce: Combine all ingredients, stirring until smooth. Cover and chill at least 2 hours.
