Alfredo Sauce with shrimp and scallops

The best ever Alfredo sauce that I have found
- 1/2 c butter
- 8 oz cream cheese
- 1 c half and half
- 1/3 c Parmesan cheese
- 1 T garlic powder
- pepper to taste
- Cooked vermicelli or bow tie pasta
- 1 lb scallops
- 1 lb shrimp
- Parmesan cheese
Chicken-Rosy Piccata

Breaded chicken breasts with a lemony sauce over pasta
- For cutlets:
- 8 oz dry linguine
- 1/2 c flour
- 2 eggs, beaten
- 2 c panko bread crumbs
- 2 boneless chicken breasts seasoned with salt and pepper
- 6 T olive oil
- For sauce:
- 1/2 c minced shallots
- 1 T minced fresh garlic c
- 1 T flour
- For Deglaze:
- 1/4 c dry white wine
- 3/4 c chicken broth
- 1 T minced lemon zest
- 1/4 c each fresh lemon juice and heavy cream
- 2 T capers
- 1 T tomato paste
- 2 T butter, cubed
- 2 T minced fresh parsley
Crusted salmon with orange vinaigrette

A moist salmon fillet with a crumb topping and a citrus vinaigrette
- For the Vinaigrette:
- 1/4 c fresh orange juice
- 1/4 olive oil
- 2 T white wine vinegar
- 1 T Dijon mustard
- 1 T honey
- 1 T orange zest, minced
- 1 T minced fresh tarragon
- 1 T shallot, minced
- 1 teas kosher salt
- 1/2 teas ground black pepper
- For Salmon:
- 2 T olive oil
- 2 T Dijon mustard
- salt and pepper to taste
- 4 skin on salmon fillets (5 oz each)
- 1/2 c panko crumbs
- 1/4 c chopped fresh parsley
- 2 T olive oil
- salt and pepper to tase

- 1/4 c milk
- 1 c mayo
- 1 T Worcestershire sauce
- 1/4 teas garlic salt
- 3 drops Tabasco sauce
- 1 onion, grated
- 1-5 oz can of shrimp
- 1/2 lb cheddar cheese, cubed
Brandy Slush

- 7 c water
- 2 c sugar
- 2 c boiling water
- 4 green tea bags
- 12 oz frozen lemonade
- 12 oz frozen orange juice
- 2-3 c brandy
Pork Medallions in Cream Sauce

An apple studded cream sauce low in fat served with pork
- 1 lb pork tenderloin, all fat removed cut into 1 inch thick slices.
- Pam spray
- 2 teas butter
- 1 small onion, chopped
- 1 Granny Smith apple, peeled, cored and chopped
- 2 cloves garlic, minced
- 5-oz can evaporated skim milk
- 1/8 teas salt
- Pinch of white pepper
- Pinch of ground nutmeg
- 2 T chopped fresh parsley
Brandy Mushroom Sauce

This sauce is great on steaks and hamburgers
- 1 T olive oil
- 10 oz sliced mushrooms
- 2 shallots, finely chopped (about 1/2 c)
- 1/2 c brandy
- 1/2 c beef broth
- 2 T Dijon mustard
- 2 teas fresh thyme leaves
- 1/2 c heavy cream
- Fresh chives
Hot Artichoke Dip

- 1/2 c mayonnaise
- 1/2 c sour cream
- 1-14 oz can artichoke hearts, drained and chopped
- 1/3 c Parmesan cheese
- 1/8 tsp hot pepper sauce
Sauteed Pork Medallions with Lemon-Garlic Sauce

Very tasty to use pork tenderloin and low fat also
- 1 lb pork tenderloin
- 1/4 tsp salt
- 1/4 tsp plus 1/8 tsp black pepper
- 2 tsp olive oil
- 2 cloves garlic, minced
- 1/2 c dry white wine(or substitute low-sodium chicken broth)
- 1/2 c low sodium chicken broth
- Grated lemon zest and 1 T lemon juice from one lemon
- 1 T chopped fresh parsley or you can use sage or rosemary
