Creamy Noodle Rotel Casserole

Preheat oven to 350. Cook together onion, bell pepper, garlic, and meat in a large skillet or kettle
- 1 large onion – chopped
- 1 large bell pepper – chopped
- 2 large garlic cloves - minced
- 2 # ground meat (turkey/beef/venison)
- 1 can creamed corn
- 1 can Ro-tel (drained)
- 1 can tomato soup
- 1 1/2 cup frozen corn
- 1 tsp. each salt, pepper and chili powder
- 12 oz. pasta (I use bowties)
Chocolate-Covered Cheesecake Squares

* Line a 9-in. square baking pan with foil and grease the foil
- FILLING:
- 1 cup graham cracker crumbs
- 1/4 cup finely chopped pecans
- 1/4 cup butter, melted
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup sugar
- 1/4 cup sour cream
- 2 eggs, lightly beaten
- 1/2 teaspoon vanilla extract
- COATING:
- 24 ounces semisweet chocolate, chopped

Preheat oven to 350ºF. Cook the ground hamburger thoroughly, drain and return to a clean skillet
- 1 pound ground hamburger
- 1/2 onion, diced
- 1 large jalapeno, diced
- 3/4 cup water
- Seasoning mix (see recipe below)
- 12 flour tortillas
- 2 cups shredded cheese
- Shredded lettuce and diced tomatoes for topping.
- Taco Seasoning Blend
- (for 1 pound ground beef)
- 1 Tablespoon flour
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon oregano

- 9 oz uncooked orechiette pasta
- 12 oz skinless, boneless chicken breasts, cut into bite-sized pieces
- Kosher salt
- Black pepper
- 2 TBS butter, divided (1 TBS / 1 TBS)
- 1 cup chicken stock, divided (1/4 cup / 3/4 cup)
- 2 TBS flour
- 1/2 cup cream
- 1/3 cup mascarpone cheese
- 1/4 cup chopped fresh parsley, divided (2 TBS / 2 TBS)
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 tsp chopped fresh thyme
- 8 oz chopped mushroom blend
- 3 TBS red wine vinegar
- 1/2 tsp Dijon mustard
Eggplant Panini with Pesto

- 1 large eggplant, about 12-14 oz
- kosher salt to taste

- 1 (5 to 6 pound) roasting chicken
- coarse sea salt
- black pepper, freshly cracked
- several sprigs of fresh rosemary
- 1 organic lemon, halved
- 4 cloves garlic, peeled and crushed roughly
- 2 tablespoons butter, melted
- 1 large yellow onion, peeled and sliced into quarters
- 4 carrots, scrubbed and cut into 2-inch chunks
- olive oil
- you will need a roasting pan
