Cajun Chicken Pasta

- 3 whole Boneless, Skinless Chicken Breasts, Cut Into Cubes
- 3 teaspoons Cajun Spice Mix, More To Taste
- 1 pound Fettuccine
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- 1 whole Green Bell Pepper, Seeded And Sliced
- 1 whole Red Bell Pepper, Seeded And Sliced
- 1/2 whole Large Red Onion, Sliced
- 3 cloves Garlic, Minced
- 4 whole Roma Tomatoes, Diced
- 2 cups Low Sodium Chicken Broth
- 1/2 cup White Wine
- 1 cup Heavy Cream
- Cayenne Pepper To Taste
- Freshly Ground Black Pepper, To Taste
- Salt To Taste
- Chopped Fresh Parsley, To Taste
Avacado, Corn, Tomato Salad w/Honey Lime Dressing

Remove husks from corn and grill over medium heat for 10 minutes
- 1 pint grape tomatoes
- 1 ripe avocado
- 2 ears of fresh sweet corn
- 2 tbsp fresh cilantro, chopped
- HONEY LIME DRESSING
- Juice of 1 lime
- 3 tbsp vegetable oil
- 1 tbsp honey
- Sea salt and fresh cracked pepper, to taste
- 1 clove garlic, minced
- Dash of cayenne pepper
Egg Salad Sandwiches with Bacon and Sriracha

- 2 center-cut bacon slices
- 1/3 cup thinly sliced green onions
- 2 tablespoons canola mayonnaise
- 1 tablespoon plain fat-free yogurt
- 1 1/2 teaspoons Sriracha (hot chile sauce, such as Huy Fong)
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt
- 6 hard-cooked large eggs, chopped
- 2 cups arugula
- 8 whole-grain bread slices
Chicken Taco Salad

First, make the dressing by combining all the ingredients in a bowl and stirring together
- FOR THE DRESSING:
- 3/4 cups Ranch Dressing (bottled Is Fine)
- 1/4 cup Salsa (as Spicy As You'd Like)
- 3 Tablespoons Finely Minced Cilantro
- FOR THE CHICKEN:
- 2 whole Boneless, Skinless Chicken Breasts
- 2 Tablespoons Seasoning (taco Seasoning, Or Your Own Mix)
- 1/4 cup Vegetable Oil
- 2 Tablespoons Butter
- FOR THE SALAD:
- 1 head Green Leaf Lettuce (1 Large Head Or Two Regular Heads), Shredded Thin
- 3 whole Roma Tomatoes, Diced
- 1/2 cup Grated Pepper Jack Cheese
- 2 ears Corn, Shucked
- 2 whole Avocados, Diced
- 3 whole Green Onions, Sliced
- 1/2 cup Cilantro Leaves
- Tortilla Chips Of Your Choice (flavored Or Not), Crushed Slightly

- 3 pounds Cube Steak (round Steak That's Been Extra Tenderized)
- 1 cup All-purpose Flour
- 1 teaspoon Seasoned Salt
- 3 teaspoons Ground Black Pepper, Or To Taste
- Salt, For Seasoning Meat
- 1/2 cup Canola Oil (more If Needed)
- 2 Tablespoons Butter
