Brie, Blueberry and Balsamic Panini

To make the jam, pulse the blueberries in a food processor until blended
- For the sandwich:
- 2 slices sourdough or ciabatta bread
- 3 ounces Brie cheese
- 1-1/2 tablespoons butter
- 1 tablespoon honey
- For the blueberry jam:
- 2 cups blueberries
- 1-1/2 cups sugar
- 3/4 tablespoon lemon juice
- 2 tablespoons balsamic vinegar
- 1 teaspoon grated lemon peel
- 1/2 teaspoon cinnamon
Creamy Polenta

Bring the water and milk to a boil in a partially covered Dutch oven over medium-high heat
- 5 1/2 cups water
- 1 cups whole milk
- 1 1/2 cups polenta or yellow cornmeal
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- salt and ground black pepper
- 1 cup Parmesan cheese, finely grated
- Cherry tomatoes for garnish (optional)

Combine all ingredients in a blender or food processor; blend until smooth
- 2 cups lightly packed fresh basil leaves
- 1 cup olive oil
- 1 cup grated Parmesan cheese
- 2 garlic cloves
- 1/2 cup pine nuts or walnuts
- 1/2 teaspoon salt
Sherry Vinaigrette Salad Dressing

- 1 1/2 teaspoons Dijon mustard
- 3 Tablespoons sherry vinegar
- 3/4 teaspoon sea salt

- 4 1/2 Tablespoons extra virgin olive oil
Everything Cookies - Pioneer Woman

This makes a HUGE batch of cookies!
- 3 sticks (1 1/2 cups) butter
- 2 cups brown sugar
- 1 1/2 cups granulated sugar
- 2 teaspoons vanilla extract
- 4 whole eggs
- 4 heaping cups all-purpose flour
- 4 teaspoons baking soda
- 1 teaspoon salt
- 3 cups prepared granola
- 1 heaping cup quick oats
- 1 cup dried, chopped apricots
- 1 cup dried cherries
- 1 cup golden raisins
- 1 cup chopped pecans
- 1 cup chocolate chips
Mustard-Molasses Chicken One-Pot

Heat 1 tablespoon EVOO in Dutch oven over medium-high heat
- 2 tablespoons extra virgin olive oil (EVOO)
- 8 pieces bone-in chicken thighs, skin removed
- Salt and pepper
- 1 large onion, quartered lengthwise, then sliced
- 3 parsnips, peeled and cut into 2-3 1-inch-long sticks, 1/2-inch wide
- 2 large carrots, peeled and cut into sticks
- 1 small bundle black kale or dinosaur kale, chopped or thinly sliced
- Freshly grated nutmeg (about 1/4 teaspoon)
- 1/4 cup grainy Dijon mustard
- 1/4 cup molasses
- 1 cup chicken stock
- Crusty bread with nuts and raisins or cranberries
Frozen Apple Pie Filling

- 7 to 8 cups sliced apples (thin)
- 1 tablespoon lemon juice
- 1 to 1 1/2 cup sugar
- 1/4 cup flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 2 tablespoons butter cut into chunks
White Chicken Chili

In a very large pot (at least 7 qt), saute the onion, carrots, and ground turkey until turkey is done
- 1 large onion, chopped
- 1 cup baby carrots, diced
- 3 lb. lean ground turkey
- 2 boxes (32 ounces) chicken broth
- 2 cans Great Northern Beans (not drained)
- 2 cans black beans (drained and rinsed)
- 1 pkg. frozen corn (32 oz)
- 2 cans Ro-Tel tomatoes
- 2 pkg. McCormick White Chicken Chili Seasoning
- Salt (to taste – don’t need much)
- Pepper (to taste)
- 1 T brown sugar
