Okra, Tomatoes, and Corn

In a large pot combine okra, onion, canned tomatoes, Rotel tomatoes/chiles, sugar, salt and pepper
- 6 cups sliced okra (or less if you have to purchase)
- 1 sweet onion, chopped
- 2 qts. Home canned tomatoes or purchase high-quality canned tomatoes
- 1 can Rotel diced tomatoes/chiles
- 3 cups frozen whole corn kernels
- 1 T sugar
- 1 t salt
- 1 t pepper
Taco Pizza

Put pizza stone in oven and pre-heat oven to 400 degrees
- 1 thin pizza crust
- 1 lb. ground beef
- 1 envelope taco seasoning mix
- 1 (16 oz.) can refried beans (I used the jalapeño kind)
- 2-3 cups shredded cheddar cheese or Mexican blend
- 1/2 cup chopped tomatoes
- shredded lettuce
- 4 green onions, chopped

- 1 bunch Asparagus, Ends Cut Off, Sliced Into 2-3 Inch Pieces
- 1 whole Red Onion, Peeled And Cut Into Large Chunks
- 1 whole Red Bell Pepper, Seeded And Cut Into Large Chunks
- 8 ounces, weight Mushrooms (any Kind), Quartered Or Halved Depending On Size
- 1 whole Medium-sized Eggplant, Cut Into Large Chunks
- 1/2 whole Butternut Squash, Peeled And Cut Into Large Chunks
- 3 cloves Garlic, Minced
- Salt And Pepper, to taste
- 1 teaspoon Montreal Steak Seasoning Or Any Other Seasonings Or Herbs

Mix the ingredients and blend them until smooth (I used hand blender)
- 2 ripe bananas (peel, cut into coins, put the banana coins on a plate and leave it in the freezer for 2 hours)
- 1 ripe mango (peel and cut into chunks)
- half of a bigger pineapple or a whole smaller one (peel and cut into chunks)
- 200 ml light coconut milk

- CHICKEN GRAVY:
- 4 boneless, skinless chicken breasts
- 1 cup canned green chiles, chopped and drained
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 cup sour cream
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
