Cucumber Bites with Herbed Cream Cheese & Cherry Tomato

This recipe for cucumber bites with herbed cream cheese and cherry tomatoes is great for party snacks or appetizers
- 4 ounces (1 Brick) cream cheese, softened to room temperature
- 1/4 cup ranch dressing
- 2 tablespoons fresh dill or thyme
- 3 to 4 long cucumbers, skinned and sliced into 1 inch slices
- 15 cherry tomatoes, sliced in half
- Salt, to taste
- Paprika or cajun spice mix, for garnish
BLT Chicken Lettuce Cups

In a large bowl, combine the chicken, bacon, and tomatoes and set aside
- 3 cups cooked chicken, shredded or diced (use my favorite method for cooking chicken)
- 6 pieces bacon, cooked and crumbled
- 16 ounces cherry or grape tomatoes, quartered
- 1/2 cup sour cream (or sub greek yogurt)
- 2 tablespoons milk
- 1/4 cup sliced green onions (use white and green parts)
- 2 tablespoons chopped fresh dill
- 1/2 teaspoon salt
- Pepper, to taste
- 1 head romaine lettuce, washed and leaves separated
Stuffed Parmesan Mushrooms Recipe

Preheat oven to 400 degrees F and line large baking sheet with parchment paper
- 20 large white mushrooms
- 1 medium onion, minced
- 3 tbsp parsley, minced
- 1 small garlic clove, minced
- 1/4 tsp freshly ground black pepper
- 1/4 tsp + a pinch of salt
- 1/2 cup + 1/4 cup Parmesan cheese, grated or finely shredded
- 2 tbsp Greek yogurt
- 1/4 cup mozzarella cheese, shredded
- Cooking spray (I use Misto)
Easy Cheesy Zucchini Bake

Preheat oven to 350F/180C
- 2 medium-sized zucchini, cut in slices or half-moon slices
- 2 medium-sized yellow squash, cut in slices or half-moon slices
- 2-4 T chopped fresh basil (or even less, depending on how much you like the flavor of basil)
- 2 T thinly sliced green onion
- 1/2 tsp. dried thyme
- 3/4 tsp. garlic powder
- 1/2 cup + 1/2 cup low-fat white cheese (I used Pizza Cheese, which is a low-fat blend of Mozzarella, Provolone, Romano, and Parmesan)
- 1/2 cup coarsely grated Parmesan (I would use a little less if you only have the very finely grated Parmesan from a can)
- salt and fresh ground black pepper to taste
Cream Cheese Cookies

Heat your oven to 375 degrees and line your cookie sheets with parchment paper
- 1/2 Cup Unsalted Butter (room temperature)
- 3 oz. Regular Cream Cheese (room temperature)
- 1 1/2 Cups Confectioner's Sugar
- 1/2 Tsp Baking Powder
- 1 Egg (room temperature)
- 1/2 Tsp Pure Vanilla Extract
- 1 3/4 Cups All - Purpose Flour
Homemade Chicken Pot Pie

Preheat oven to 400 degrees F
- 4 tablespoons butter
- 1/2 cup diced onion
- 3 carrots, diced (about 3/4 to 1 cup)
- 3 celery ribs, diced (about 3/4 to 1 cup)
- 2 cloves garlic, minced
- 1/2 cup frozen peas (no need to defrost - I used Cascadian Farm brand)
- 3 cups shredded cooked chicken (I highly recommend using The Best Whole Chicken in the Crock Pot recipe to make your chicken!)
- 4 tablespoons whole-wheat flour
- 3 cups chicken broth
- 1 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh parsley leaves, chopped
- 1 cup + 2 tablespoons whole-wheat flour, plus extra for rolling out the dough
- 1/4 tsp salt
- 1/2 cup cold, unsalted butter (1 stick)
- 1/4 cup water plus ice
- 1 egg beaten with a splash of water
- Round baking dish
- Baking sheet
- Food processor
Pumpkin Pie Overnight Oats

Pour all the ingredients into a jar and mix very well
- 1/2 cup gluten free steel cut oatsor rolled oats
- 1 1/2 T pumpkin
- 1 tsp chia seeds
- 1 tsp flax meal
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/8 tsp cloves
- 1 medjool date chopped or 2 tsp maple syrup
- 1/2 cup almond milk
Thai Cucumber Salad

Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes
- Salad:
- 3 large cucumbers peeled, halved lengthwise, seeded, and cut into 1/4 inch slices
- 1 tablespoon kosher salt
- 2 jalapeño peppers seeded and chopped
- 1/2 small red onion, very thinly sliced
- 1 cup packed cilantro, chopped
- 1/2 cup chopped peanuts
- Dressing:
- 1/2 cup rice wine vinegar
- 1 tablespoon honey (or more to taste)
Mexican Stuffed Bell Peppers

For a healthy and filling meal, these stuffed bell peppers make a great main dish
- 3 large red bell peppers
- 1 pound lean, ground turkey
- 1 tablespoon coconut oil
- 1 small red onion, chopped
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ground cumin
- 2 teaspoons chili powder
- 1 cup frozen corn
- 1 (15-ounce) can tomato sauce or (12-ounce) jar of your favorite clean salsa
- 3 tablespoons cheddar cheese, freshly grated
- Fresh cilantro for garnish
One Pot Thai Quinoa Bowl

Quinoa Bowl: In a large skillet, heat olive oil over medium heat
- Peanut Sauce:
- 1 Tbsp olive oil
- 1 small red onion, chopped
- 3 garlic cloves, minced
- 2 cups broccoli, chopped
- 2 cups sliced red cabbage
- 2 cups julienned carrots
- 1 cup uncooked quinoa, rinsed and drained
- 2 1/2 cups chicken stock
- 2 tsp ground ginger
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 2 cups frozen edamame, thawed
- 4 cups chopped cooked chicken
- 1/2 cup peanut butter
- 6 Tbsp water
- 6 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 2 Tbsp honey
- 1/4 tsp sesame oil
- 1/2 tsp red pepper flakes
- 1/2 tsp ground ginger
- For Garnish:
- Handful Cilantro
- 1/2 cup Chopped Peanuts
