Whole Wheat Chocolate Chip Cookies (With Sugar)

Preheat oven to 375 degrees F
- 2/3 cup whole-wheat flour, pastry or white winter wheat recommended
- 1/2 cup white flour (or can use all whole-wheat instead)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick butter (8 tablespoons), slightly colder than room temperature
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 teaspoon vanilla
- 3/4 cup chocolate chips
Crock Pot Macaroni and Cheese

Mix all ingredients except 1/2 cup cheese in a slow cooker, then sprinkle the remaining cheese on top
- 1/2 pound uncooked elbow macaroni (regular, gluten free, spelt, you name it on the variety of noodle)
- 3 cups shredded Cheddar cheese, divided
- 3 cups whole milk (I use goat milk)
- 2 eggs
- 1/2-1 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon mustard powder
Homemade Hoisin Sauce

Pour 2 tsp. of sesame oil into a small bowl as the base of the Hoisin sauce
- 2 tsp. of sesame oil
- 4 tbsp. soy sauce
- 2 tbsp. peanut butter
- 1 tbsp. honey
- 2 tsp. white vinegar (or rice vinegar)
- 1/8 tsp. each of garlic powder and black pepper
- 20 drops of any type of hot sauce.
Pork Tenderloin w/ Pan Sauce

Combine all marinade ingredients and reserve 2-3 Tbsp
- Marinade:
- 1/2 cups olive oil
- 1/3 cup soy sauce
- 1/4 cup red wine vinegar
- Juice of 1 lemon
- 1-2 tbsp Worcestershire sauce
- 1-2 tbsp fresh parsley, finely chopped
- 2 tsp dry mustard
- Freshly cracked black pepper, to taste
- 4 cloves garlic, peeled and minced
- 1 1-lb. pork tenderloin (silver skin removed)
- Pan Sauce:
- Pan scrapings from pork tenderloin
- 1/2 cup of chicken broth
- 2-3 tbsp of pork marinade (thoroughly mixed)
- 1-2 tsp butter

- QUINOA:
- 1 cup quinoa (I used a combination of red and white)
- 2 cups water
- 1/2 teaspoon salt
- Juice and zest one lime, or 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- CHICKEN:
- 2 large chicken breasts
- 2 teaspoons sea salt
- 1 tablespoon coconut oil or ghee
- SWEET POTATOES:
- 1 large sweet potato, washed, with both ends cut off
- 1 tablespoon coconut oil
- OTHER INGREDIENTS:
- 3 cups lettuce, chopped
- 5 tablespoons plain Greek yogurt
- 3/4 cup cheese, shredded
- 1/2 cup fresh cilantro, chopped
Parmesan Zucchini Sticks

Preheat oven to 350 degrees F
- 4 zucchini, quartered lengthwise
- 1/2 cup grated Parmesan
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh parsley leaves
Herbed Pasta Primavera

Cook penne according to package directions; drain
- 1 3/4 cups dried multigrain or whole wheat penne pasta (8 ounces)
- 8 ounces packaged peeled baby carrots, halved lengthwise (1-3/4 cups)
- 1 tablespoon olive oil
- 8 ounces fresh green beans, trimmed and cut into 2-inch pieces (1 1/2 cups)
- 1/2 cup sliced green onion or 1 medium onion, chopped
- 3/4 cup chicken broth
- 2 cloves garlic, minced
- 1 medium zucchini and/or yellow summer squash, halved lengthwise and sliced 1/4-inch thick (2 cups)
- 2 tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed
- 1/4 teaspoon salt
- 1/4 cup sliced almonds, toasted (optional)
- Grated or finely shredded Parmesan cheese (optional)
- Cracked black pepper
Pumpkin Alfredo

Bring 1-2 quarts of water to a rolling boil in a small pot
- 6 oz dry whole wheat pasta
- 1 Tbsp unsalted butter
- 1 shallot, minced
- 1/2 cup pumpkin puree
- 1/2 tsp ground sage
- 1/2 cup 2% milk
- 1/2 cup half and half
- 1/4 cup (1 oz) Parmigiano Reggiano cheese, grated
- 1/4 tsp salt and black pepper, to taste

- 2 Avocados
- 1 Tb. Fresh Lemon Juice.
- 1/2 of a large tomato or 1 small tomato
- 1 to 2 Green Onions
- 1 Tb. Fresh Chopped Cilantro.
- 1/2 tsp. Chili Powder
- 1/2 tsp. Chipotle Chile
- 1 tsp. Garlic Powder
- 1/4 tsp. Salt
