Buffalo Chicken Lettuce Wraps

Preheat oven to 315 Degrees In a frying pan, cook chicken half way through
- Crumbled Blue Cheese (or can sub crumbled goat cheese)
- Frank's Red Hot - Buffalo
- 1/2 cup celery Chopped
- 1/2 cup carrots chopped
- Romaine or Butter lettuce
- 1 lb ground chicken
Christmas Crunch Cookies

To make the cookies, preheat oven to 350
- 1/4 cup sugar
- 1/2 cup packed brown sugar
- 1 1/2 cups flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup M&M’s
- 1/2 cup rolled oats
- 1/2 cup Rice Krispies
- 1/2 cup white chocolate chips
- 1/2 cup butter, softened
- 1/2 teaspoon vanilla extract
- 1 egg
Turkey Stuffed Peppers

Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame
- 1 lb lean ground turkey meat
- 1 clove garlic, minced
- 1/4 onion, minced
- 1 tbsp chopped fresh cilantro or parsley
- 1 tsp garlic powder
- 1 tsp cumin powder
- salt to taste
- 3 large sweet red bell peppers, washed
- 1 cup fat free chicken broth
- 1/4 cup tomato sauce
- 1 1/2 cups cooked brown rice
- Olive oil spray
- 1/4 cup shredded cheese
- Other options: Rotel. Worcestershire sauce. Chopped mushrooms.
Oreo Truffles

Mix 3 cups of the cookie crumbs and the cream cheese until well blended
- 1 package (1 lb. 2 oz.) OREO Cookies, finely crushed, divided (crushing in the food processor is easiest)
- 1 package(8 oz.) PHILADELPHIA Cream Cheese, softened
- 4 packages (8 squares each) BAKER'S Chocolate, melted (milk, dark or white chocolate)
- Note: The Baker's white chocolate does not melt very well. White Candy Melts work much better.
Summer Vegetable Medley

Chop the zucchini and squash into quarters and dice the red onion Heat extra virgin olive oil in a pan Put diced
- 1 large zucchini
- 2 yellow squash
- 1 red onion
- 3 tablespoons olive oil
- Crumbled feta
- Garlic powder
- Freshly ground salt
- Freshly ground pepper
Whole-Wheat Bread Stuffing

Preheat the oven to 350 degrees F
- 6 tablespoons butter
- 1 onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced or diced
- 4 tablespoons whole wheat flour
- 1 cup milk
- 1 cup chicken broth (homemade recommended)
- 1/2 teaspoon salt
- 6 pieces of whole wheat sandwich bread, cut into 1" cubes (about 6 cups worth)
- 2 eggs, beaten
Skinny Buffalo Chicken Dip

Place all the ingredients in a medium saucepan, over medium heat
- 1/2 block (4 ounces) neufchatel
- 3/4 cup plain Greek Yogurt
- 1/2 cup Frank's red hot buffalo (or more to taste)
- 1/4 cup blue cheese crumbles
- 1 cup shredded part-skim mozzarella cheese
- 2 cups cooked shredded chicken
Grandpa Humpal's Oatmeal Butterscotch Cookies

Preheat oven to 375 degrees In a small bowl, combine flour, baking soda, and salt; set aside
- 1-1/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups oatmeal
- 1 12 oz package butterscotch chips
Sausage and Sweet Potato Zucchini Lasagna

Cut the zucchini into thin strips lengthwise
- 3 large zucchini (or can use whole wheat lasagna noodles)
- 1 lb. ground pork
- 2 large sweet potatoes (4-5 cups when cooked and cut)
- 1 cup milk
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 5 cloves garlic
- 2 teaspoons ancho chili powder (in the spice aisle)
- 2 teaspoons ground cumin
- 1 1/2 teaspoons salt
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onions
- 2 cups shredded Mozzarella or Provolone cheese
No-Bake Energy Bites

- 1 cup rolled oats
- 1/3 cup coconut flakes (optional - can replace with some kind of nut if you want)
- 1/2 cup nut butter
- 1/2 cup ground flax seed
- 1/2 cup chocolate chips (optional, but I didn’t use them this time around)
- 1/4 cup raw honey
- 1 tsp vanilla
