Whole-Wheat Christmas Cookies (with sugar!)

Preheat the oven to 400 degrees F
- 1 1/2 cups whole-wheat flour, plus extra for rolling out the dough
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold butter (1 stick)
- 1/3 cup granulated white sugar
- 1 egg
- 4 teaspoons heavy cream
- 1 teaspoon pure vanilla extract
- 1 1/2 cups powdered sugar
- 7 - 8 tablespoons heavy cream
Carrot Cake Oatmeal Cookies

In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt
- 1 c (98g) instant oats (gluten-free if necessary)
- 3/4 c (90g) whole wheat or gluten-free* flour (measured correctly)
- 1 1/2 tsp (5g) baking powder
- 1 1/2 tsp (3g) ground cinnamon
- 1/8 tsp (1g) salt
- 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
- 1 large egg, room temperature
- 1 tsp (5mL) vanilla extract
- 1/2 c (120mL) maple syrup
- 3/4 c (68g) grated carrots (about 1 smallish medium)

- For the jars:
- 1 large cucumber (or two small ones), diced
- 2 apples, diced
- 2 large carrots, shredded
- 1 container blueberries
- 1 cup of walnuts
- 1 container feta cheese
- 1 large container organic spinach
- For the dressing:
- 1 cup fresh strawberries
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried tarragon
- 1/4 teaspoon honey
Berry Banana Quinoa and Oats Breakfast Bake

Note: Takes one hour to cook in the oven and another hour to cool and set
- 1/2 cup quinoa, uncooked
- 1/2 cup steel cut or old fashioned, uncooked
- 3 medium very ripe bananas, sliced
- 1 + 1/2 cup blueberries
- 1/2 cup raspberries
- 2 cups milk of choice
- 2 large eggs or 1/2 cup egg whites (I used eggs)*
- 1 scoop protein powder (optional)**
- 1 - 2 tbsp maple syrup*** (skip if adding sweetened protein powder)
- 1 tsp pure vanilla extract
- 1/2 tsp cinnamon
- Dash of salt

- 1 pound (local and/or organic) chicken breasts
- 2 tablespoons olive oil
- Whole-wheat flour, spread on a plate
- Salt and pepper, to taste
- 1 1/2 cups dry Marsala wine
- 1 cup heavy cream, preferably organic
- 1 bunch roasted asparagus (or other vegetable like steamed broccoli or raw spinach)
- Freshly grated Parmesan cheese for serving

No Bake Black Bean Brownies

In a powerful blender or food processor, process all ingredients (except cacao nibs and drizzle) until very smooth
- 14 oz can black beans, drained & rinsed
- 13 Medjool dates, pitted
- 1/4 cup applesauce, unsweetened
- 1/3 cup cacao powder
- 3 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
- 1 tsp salt*
- 2 tbsp cacao nibs or mini chocolate chips
