Homemade Freezer Breakfast Sandwiches

Preheat the oven to 350 degrees
- 12 whole-wheat English muffins
- 12 fully-cooked Turkey sausage patties (I use Jimmy Dean)
- 12 slices sharp cheddar cheese
- 12 eggs
- Butter
- Salt, pepper (and any other seasoning you like)
Chocolate Oatmeal No-Bake Bars

Melt the peanut butter, honey, and coconut oil over medium-low heat in a saucepan on the stove
- 1 cup peanut butter
- 1/2 cup honey
- 1/2 cup coconut oil (you could also substitute butter)
- 2 cups old fashioned oats
- 1 cup shredded coconut
- 1/2 cup chopped nuts, raisins, or dried cranberries
- 1 1/4 cups dark chocolate chips (or regular semi-sweet chocolate chips, if you prefer)
- 1 teaspoon vanilla extract
Crustless Broccoli & Cheddar Quiche

Preheat oven to 350 degrees Bring a medium pot of water to a boil
- 6 eggs
- 1/2 cup milk
- 1 tablespoon Dijon mustard
- 1-2 cups shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fresh or dried parsley
- 1 large head of broccoli, cut into florets and cooked
- 2 garlic cloves, minced
- 1/2 cup onion
- Olive oil for cooking
Peanut Squash Soup

Heat peanut oil in a large saucepan over medium-high heat
- 1 tablespoon peanut oil
- 4 cups (1/2 inch) cubed peeled butternut squash
- 1 cup chopped onion
- 2 tablespoons minced garlic (about 6 cloves)
- 1/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 3 – 4 cups chicken stock/broth (depending on how soupy you like it)
- 3/4 cup peanut butter
- 2 tablespoons tomato paste
- Crushed red pepper, to taste
- 1/2 cup chopped fresh cilantro
Slow Cooker Turkey Chili

Cook ground turkey (or beef) on the stove, set aside
- 1-2 cans of black beans (drained)
- 1 28oz can of crushed tomatoes
- 1 8oz can of tomato sauce
- 1 small diced onion
- 2 large carrots, diced
- 2 celery stalks, diced
- 1 cup of frozen corn
- 2 garlic cloves, minced
- 2-3 Tbsp chili powder
- 1 Tbsp of Italian seasoning
- 1/2 Tbsp sea salt
- 1 pound ground turkey or 2 cups shredded/chopped turkey (or beef)
- Shredded cheese to garnish each bowl
Twice Baked Sweet Potatoes w/ Feta

Preheat oven or toaster oven to 350F/180C
- 2 small orange-fleshed sweet potatoes (often called yams or sweet yams in U.S. grocery stores)
- 2 oz. crumbled feta (or slightly more if you're feeling indulgent)
- pinch of ground fennel seed
- pinch of ground coriander
- 1/2 tsp. finely minced garlic
- pinch of crushed red pepper flakes
- 2 tsp. olive oil
- ground sumac for serving (optional, but good; you could substitute a little bit of smoked paprika)
Slow Cooker Asian Short Ribs

In a small bowl, combine the 5-spice powder, paprika, salt, and pepper
- Ribs:
- 1 1/2 teaspoons 5-spice powder (a mixed spice found in the baking aisle of the supermarket)
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, peeled and quartered
- 5 garlic cloves, mashed
- 3 pounds beef short ribs, preferably grass-fed
- Recommended side items: Brown rice noodles and bok choy
- Soy Sauce Glaze:
- 1/3 cup soy sauce
- 1 tablespoon honey

- 1 cup sugar

- 1/4 cup Franks Red Hot Buffalo sauce (more to taste)
