Crockpot Whole Chicken

Combine all spices. And rub all over chicken
- 4 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 large roasting chicken (mine was about 5.5 lbs)
- 1 cup chopped onion
Cherry Tomatoes Stuffed with Goat Cheese and Herbs

In medium bowl, combine chevre, garlic, basil, salt and pepper
- 8 oz. chevre, softened
- 2 cloves garlic, minced
- 3 tbsp fresh basil, finely chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 pints cherry tomatoes
Greek Salads in a Jar

Mix up all of the dressing ingredients in a bowl
- For the salad:
- 5 quart size wide mouth mason jars
- Homemade Greek Dressing (see below
- 1 quart cherry tomatoes, halved
- 5 mini cucumbers, sliced
- 1 cup thinly sliced red onion
- 3/4 cup crumbled feta cheese
- 2 cups chopped or shredded chicken of your choosing (rotisserie, greek, etc.)
- 5 cups chopped romaine lettuce
- For the dressing:
- 1/4 cup + 1 tablespoon red wine vinegar
- 1/2 cup + 2 tablespoons olive oil
- 2 tablespoons + 1 1/2 teaspoons fresh lemon juice
- 2 1/2 teaspoons dried oregano
- 2 1/2 teaspoons dijon mustard
- salt and pepper to taste
Funfetti Cake Batter Fudge

Pour milk and white chocolate into a microwave-safe bowl
- 1 14 ounce can sweetened condensed milk
- 3.5 cups white chocolate chips
- 3 tsp Vanilla Extract
- 1/2 tsp Almond Extract
- Rainbow Sprinkles (the long ones for the batter and the dot ones for on top)
Cucumber Melon Mint Infused Water

- 1/4 to 1/2 large cucumber
- 2 slices cantaloupe
- 1 handful fresh mint
- 1-2 quarts water

Spiced Pita Chips

Preheat oven to 350 degrees
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon salt
- 3 whole-wheat pitas, cut into 1/8's
Asian Noodle Salad Jars

In large pot of boiling water, cook noodles according to package instructions
- For the salad:
- 4 ounces soba noodles
- 1 red bell pepper, thinly sliced
- 1 cup shelled edamame, cooked
- 2 large carrots, peeled and shredded
- 4 green onions, thinly sliced
- 1/2 cup crunchy rice noodles
- For the spicy peanut dressing:
- 2 tablespoons peanut butter
- 4 teaspoons sambal oelek
- 4 teaspoons rice vinegar
- 4 teaspoons soy sauce
- 1/4 cup extra virgin olive oil
- 1 tablespoon black sesame seeds
Roasted Vegetables w/ Feta

Preheat oven to 350°F. Arrange vegetables in a small baking dish
- 2 cups zucchini, washed and sliced
- 1 green, 1 red, 1 yellow bell pepper, seeded and cut into thin strips
- 1 small tomato, cut into wedges
- 1 small onion, peeled, sliced and separated into rings
- 1/2 cup fresh mushrooms, sliced
- 1 tablespoon olive oil
- 1 tablespoon oregano, crumbled
- salt and pepper to taste
- 4 ounces feta
Maple PPBB Overnight Oats

In a small bowl or jar, combine oats, chia seeds, cinnamon, almond milk, and vanilla
- 1/4 cup oats (I prefer old-fashioned, but quick cook works fine)
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 3/4 cup unsweetened almond milk
- A splash of vanilla
- 1/2 ripe banana, sliced
- 1 tbsp natural peanut butter
- 1 tsp maple syrup
- A small handful of pecans, toasted*
