Pesto Cream Cheese Turnovers

These savory Pesto Cream Cheese Turnovers are a great appetizer
- FILLING
- 1/2 cup fresh basil leaves
- 1/2 cup fresh spinach leaves
- 1/3 cup freshly grated Parmesan cheese
- 1/4 cup pine nuts
- 1 garlic clove
- 2 tablespoons olive oil
- 1/4 cup cream cheese
- PASTRY CRUST
- 2 1/4 cups whole-wheat flour, plus extra for rolling out the dough
- 1/2 teaspoon salt
- 1 cup cold, unsalted butter, 2 sticks
- 1/2 cup water plus ice
- 1 egg beaten
Greek Tzatzki (Overnight Recipe)

Grate the cucumber and drain through a fine mesh sieve overnight in the fridge
- 1/2 a large cucumber, unpeeled
- 1 1/2 cups plain full-fat Greek yogurt
- 2 large garlic cloves, finely minced
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon white vinegar
- 1/2 teaspoon salt
- 1 Tablespoon minced fresh dill
Roasted Parmesan Sweet Potatoes

Preheat oven to 400 degrees and position oven rack to middle position
- 2 large sweet potatoes, peeled and cubed
- 2 large cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 2-3 tablespoons Parmesan cheese, finely grated

Simple Mint Fudge

- 14 oz can condensed milk
- 14 oz package of semi sweet chocolate chips.
- 10 oz package of Andes mint chips (or one container unwrapped Andes candies if you can't find the chips)

Spicy Roasted Vegetable Macaroni and Cheese

Preheat oven to 400 degrees F
- 1 cup broccoli florets, chopped into small chunks
- 1/2 red pepper, diced
- 1 yellow squash, quartered and diced
- 10 baby carrots, sliced thinly
- 2 cups whole wheat pasta (elbow macaroni, rotini, penne, etc.)
- 1/4 cup olive oil
- 1 garlic clove, minced
- 3 Tbsp. whole wheat flour
- 1 1/2 cups milk
- 2 cups (8 oz.) Shredded Sharp Cheddar Cheese
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. cayenne pepper
- Salt and pepper, to taste
- 2 Tbsp. whole wheat panko breadcrumbs
