Chocolate Mint Layer cake

Preheat oven to 350. Butter and flour 3 9 inch diameter cake pans with 1 1/2 inch high sides
- 1 3/4 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 1/4 tablespoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 cups sugar
- 1 1/2 sticks unsalted butter, at room temp
- 3 eggs
- 4 teaspoons vanilla
- 1 1/2 cups buttermilk
- 3 1/2 cups whipping cream
- 6 tablespoons sugar
- 1 teaspoon peppermint extract
Four cheese and spinach lasagna

Pre-heat the oven to 350 deg f Bring a large pot of water to a boil over high heat and salt it generously
- Tomato Sauce with Basil:
- Kosher salt and freshly ground black pepper
- 12 dry lasagna noodles (not no-boil)
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic, minced
- 1 (10 ounce) box frozen spinach, thawed
- 1 lb cottage cheese (about 1 3/4 cups)
- 4 ounces fresh goat cheese, softened
- 3/4 cup freshly grated Parmesan, Pecorino Romano, or a combination
- 1 lb pre-shredded mozzarella, shredded (about 4 cups)
- Finely grated zest of 1 lemon
- 1/2 teaspoon freshly grated nutmeg
- 1/8 teaspoon, cayenne
- 1 large egg, beaten
- 4 cups tomato sauce
- 1/4 cup extra-virgin olive oil
- 4 large cloves garlic, smashed
- 2 (28 ounce) cans whole peeled tomatoes, with juices (about 7 cups)
- 1 teaspoon kosher salt
- 2/3 cup packed basil leaves
- Freshly ground black pepper.
Lemon Jello Mold

Dissolve jello in hot water Add lemonade Let it sit around 45 minutes Use mixer and add Cool Whip until fluffy
- 1 6oz. Lemonade
- 1 large lemon jello
- 8 oz. cool whip
- 3 cups hot water
Pasta with Pumpkin Sauce

In a large skillet, heat 1 tbsp olive oil over high heat for 2 min
- 3 tablespoons olive oil
- salami
- 1 cup chopped onions
- 10 cloves garlic, thickly sliced
- 3 tablespoons chopped fresh sage
- 1 1/4 cups white wine
- 1/2 teaspoon cinnamon
- 1 1/4 pumpkin puree
- 2 cups chicken stock
- 1 lb penne
- 6 tablespoons grated Parmesan cheese
Artichoke and Feta Cheese Pizza

Preheat oven to 425. Cut artichokes into 1/2 inch pieces
- 1 6 oz. jar marinated artichoke hearts, reserve liquid
- 1 tablespoon yellow corn meal
- 1 refrigerated pizza dough
- 6 ounces plum tomatoes, thinly sliced into rounds
- 1 cup crumbled herb seasoned feta cheese, about 4 oz.
- 1/2 sweet onion, thinly sliced
- 2 tablespoons fresh mint, thinly sliced

- 1 (7 ounce) jar marshmallow cream (clouds)
- 1 1/2 cups white sugar (princess's diamonds)
- 2/3 cup evaporated milk (mountain snow)
- 1/4 cup butter (candy bricks)
- 1/4 teaspoon salt (the lost sea)
- 3 cups milk chocolate chips (from the milky way)
- 1/2 cup chopped nuts (hidden forest)
- 1 teaspoon vanilla extract (magical island)
Cherry Tarts

Mix crumbs and melted margarine Beat cream cheese, egg, vanilla, and sugar
- 1 1/4 cups graham cracker crumbs
- 2/3 stick butter, melted
- 8 ounces cream cheese
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup sugar
- 1 can in syrup sour cherries for baking
Artichoke Dip

- 2 6 oz. jars marinated artichoke hearts, cut and strained
- 1 3 oz. package cream cheese, softened
- 2 cups mayonnaise
- 1 1/2 cups Parmesan cheese

- 1 dash garlic powder

- 1/2 package sheet frozen puff pastry, Pepperidge Farm- 1 sheet
- 4 squares unsweetened chocolate
- 1/4 cup margarine OR butter
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons flour

- 1 1/2 cups egg whites at room temp
- 1/2 teaspoon salt
- 1 1/2 teaspoons cream of tartar
- 1 1/2 teaspoons vanilla
- 2 cups whipping cream
- 1 cup milk chocolate flavor cocoa mix
- 2 tablespoons instant coffee powder
