- 1 red onion, cut into rings
- BBQ sauce
- mozzarella cheese
- 1 pizza dough
Chilled Summer Vegetable Chowder

Combine all ingredients in a medium bowl
- 1 long European seedless cucumber, peeled and finely diced
- 1 cup plain nonfat yogurt
- 1 teaspoon ground white pepper
- 1 teaspoon salt
- 2 plum tomatoes, peeled and finely diced
- 1/4 cup finely diced zucchini
- 1/4 cup yellow corn kernels
- 1/4 cup jicama, peeled and finely diced, or water chestnuts
- 1 scallions, finely diced
- 1 tablespoon rice wine vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon basil, finely shredded

- 8 chicken breast halves, skinned and boned
- 1/4 cup butter
- 1/3 cup honey
- 1/4 cup Dijon mustard
- 1 clove garlic, crushed
- 2 teaspoons fresh lemon juice
- 2 teaspoons curry powder
- 1 teaspoon salt
- Rice, freshly cooked
Sun-Driend Tomato Pesto

Position knife blade in food processor bowl
- 1 cup sun-dried tomatoes, in olive oil
- 3/4 cup Parmesan cheese, grated
- 1/2 cup walnut pieces
- 2 cloves garlic, cut in half
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup olive oil, warm
Greek Salad

Toss salad (first 6 ingredients) with vinaigrette (last 8 ingredients)
- Tomato, regular or plum
- Pickling cucumber, cut in chunks -2C to each tomato
- 1/2 lb feta cheese
- 12 Calamata Greek olives, drained
- 2 white onions, sliced thin
- Lettuce, optional
- 1/4 cup oil
- 1/4 cup olive oil
- 1/2 cup wine vinegar
- 1/2 teaspoon oregano
- 1 teaspoon sugar
- Salt, to taste

Mushroom Barley Risotto

- 4 1/2 cups chicken stock
- 2 teaspoons butter
- 1 cup finely chopped onions
- 1 cup pearl barley
- 2 teaspoons fresh thyme, chopped, or 3/4 tsp dried
- 1 bay leaf
- 2 teaspoons olive oil
- 1 lb assorted sliced fresh mushrooms
- 1 clove garlic, minced
- 2 tablespoons fresh Italian parsley, chopped

- 1 cup diced eggplants
- 1/2 cup kidney beans, canned, rinsed, and drained
- 1/2 cup mozzarella cheese, diced
