Pasta with Pumpkin Sauce

Ingredients

  • 3 tablespoons olive oil
  • salami
  • 1 cup chopped onions
  • 10 cloves garlic, thickly sliced
  • 3 tablespoons chopped fresh sage
  • 1 1/4 cups white wine
  • 1/2 teaspoon cinnamon
  • 1 1/4 pumpkin puree
  • 2 cups chicken stock
  • 1 lb penne
  • 6 tablespoons grated Parmesan cheese

Step 1

In a large skillet, heat 1 tbsp olive oil over high heat for 2 min. Add salami and cook until browned, about 3 min. Transfer salami to a small bowl and cover.

Discard all but 1 tbsp of the oil left in the pan. Add the remaining olive oil and cook for 3 minutes over medium heat. Add the onion, garlic, and sage and cook for 10 min, stirring until the onion and garlic start to brown, then stir in the salami and cook for 2 more min. Carefully pour in the wine and cook for 8 min, stirring to loosen the brown bits of food on the pan. Add the chicken stock and pumpkin puree and bring to a boil over high heat, then reduce heat and simmer for 30 min.

In the meantime, cook and drain the pasta. Combine pasta and sauce in a large pot and cook over medium heat for 3-5 min, stirring constantly. Remove from heat and serve with Parmesan cheese.
