- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup margarine
- 3 squares unsweetened chocolate
- 3 eggs
- 2 cups sugar
- 1/3 cup Kahlua
Egg Souffle

Spread soft margarine on white bread
- Margarine
- 6 slices white bread
- 4 eggs
- 2 cups milk
- 8-10 ounces cheddar cheese
Non- fat Mocha Cake

Preheat oven to 350. Line bottom of 9 inch round cake pan with 1 3/4 inch sides with wax paper
- 1 cup flour
- 1/3 cup plus 2 tbsp. unsweetened cocoa powder
- 1 teaspoon instant espresso powder, or instant coffee
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 6 egg whites, room temperature
- 1 1/3 cups golden brown sugar, firmly packed
- 1 cup nonfat yogurt, coffee flavored
- 1 teaspoon vanilla
- 1 teaspoon powdered sugar
- 1/2 teaspoon cinnamon
Jackie's Carrot Souffle

Place carrots and eggs in blender first (not cusinart)add remainder of ingredients
- Topping:
- 1 lb cooked carrots (fresh, peeled, and cooked)
- 3 eggs
- 1/3 cup sugar
- 3 tbsp flour
- 1 tsp vanilla
- 1/4 lb butter (melted)
- Dash nutmeg
- 1/2 cup crushed corn flakes and walnuts
- 3 tbsp brown sugar
- 2 tsp soft butter
Kahlua Chicken

Fry breasts in sesame oil and garlic in wok
- 1 cup mandarin orange juice
- 1 cup unsweetened pineapple juice
- Kahlua, a lot
- Ginger, grated
- soy sauce
- 2 teaspoons sesame oil
- chicken breast
Noodle Pudding

- 8 ounces medium noodles
- 1 egg
- 1 tablespoon margarine, heaping
- 1 apple, thinly sliced and peeled
- 1 handful raisins
- 1/2 cup sugar
- cinnamon
- lemon juice

Chocolate Espresso Angel Food Cake

In a small bowl, sift together 1/2 cup sugar, flour, cocoa, espresso granules
- 1 1/4 cups sugar, divided
- 3/4 cup plus 1 tsp sifted cake flour

- 11 egg whites, at room temp
- 1 1/2 teaspoons cream of tartar
- 1/2 teaspoon salt

Pasta with Arugula

- 3 pepper, yellow, red and green, seeded and chopped
- 3 cloves garlic, chopped
- 12 ripe cherry tomatoes, quartered
- 1/4 cup plus 2 tbsp. olive oil
- 1 bunch arugula, washed and dried
- 1 lb garganelli pasta, or penne
- pepper
- salt
- 1/4 cup plus 2 tbsp. olive oil
Delicious Hot Artichoke Dip Mexican style

Finely chop the artichoke hearts
- 1 cup mayonnaise
- 1 cup Parmesan cheese, grated
- 1 can artichoke hearts, not marinated in oil, drained
- 1 can diced chillies (Ortega brand) drained
- 1 clove of garlic, minced, more if you like!
- 1 tsp olive oil
