Preheat oven to 400. Lightly oil baking sheet
- 1 1/2 cups chopped onions
- 2 tablespoons uncooked couscous
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh parsley
- 1 1/2 teaspoons garlic salt
- 2 1/2 pounds chicken
Penne with Broiled Vegetables and Feta Cheese

Preheat broiler. Cook pasta in pot of boiling salted water until just tender but still firm to bite
- 1/2 lb penne
- 2 zucchini, quartered lengthwise and cut into 2 inch strips
- 1 red bell pepper, cut into 2x 1/2 inch strips
- 1/2 cup bottled balsamic vinaigrette
- 1/2 cup crumbled garlic and herb feta cheese, about 2 ounces
- 2 tablespoons fresh mint, chopped

- 1/2 cup shortening
- 1 egg
- 1 1/2 cups flour
- 1 teaspoon vanilla
- 1 cup sugar

- 1 pound jack cheese
- 1 pound cheddar cheese
- 1 evaporated milk, small can
- 3 whole green chilies, small
- 3 eggs
- 3 tablespoons flour

Put tomatoes in large pot and crush with hands
- 3 large cans pear shaped tomatoes
- 3 cucumbers, large
- 3 stalks celery
- 6 green onions
- 1 green or red bell pepper
- 2 cloves garlic, minced
- 1 quart tomato juice
- 1 cup oil
- 1/2 teaspoon Tabasco
- 1/2 teaspoon dill
- 3 lemons, juice only
- 1 tablespoon sugar
- salt
- pepper
Baked Brunch Eggs

Preheat oven to 325. In large bowl combine all ingredients
- 12 eggs, beaten
- 2 16 oz. cans creamed style corn
- 4 cups sharp cheddar cheese, grated
- 2 4 oz. cans whole green chilies
- 1 tablespoon Worcestershire sauce
- 1 tablespoon salt
- 1/2 teaspoon pepper

Sun-Dried Tomato Cheese Spread

Position knife blade in food processor bowl
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/2 cup Parmesan cheese, grated
- 1/2 cup sun-dried tomatoes, packed in oil and drained
- 2 tablespoons oil, from sun-dried tomatoes
- 1 tablespoon fresh basil, chopped or 1 tsp. whole dried basil
