Family Favorite Meatloaf

Basic Southern meatloaf that has the most delicious topping with the perfect balance of sweet and tangy
- MEATLOAF:
- 2 1/2 lbs. good quality lean ground beef (I used 93/7)
- 1 cup freshly ground white bread crumbs* (4 slices, crusts removed)
- 1/2 cup crushed saltine crackers* (12 single crackers)
- 1/2 cup very finely chopped yellow onion
- 1 jumbo egg, beaten
- 1 (8 oz) can tomato sauce (I use Hunt's)
- 2 teaspoons salt, or to taste
- 1/4 teaspoon black pepper, or to taste (I added a little more)
- TOPPING:
- 2/3 cup ketchup (I use Hunt's)
- 1/2 cup water
- 1 tablespoon dark brown sugar
- 1 tablespoon yellow table mustard (I use French's)
- 1 tablespoon white vinegar
Kentucky Hot Brown

In the 1920's, the Brown Hotel in Louisville, KY drew over 1,200 guests each evening for its dinner dance
- Recipe makes 4 sandwiches:
- 2 tablespoons salted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups half-and-half, heavy cream, or whole milk
- 1/4 cup Pecorino Romano Cheese or grated Parmesan Romano blend (or other white cheese of choice, amount to taste. I used about 1/3 c. shredded Parmesan plus a little grated Parmesan in green can)
- 1/2 teaspoon salt
- Pinch garlic salt
- 1/4 teaspoon ground white pepper
- 1/8 teaspoon cayenne pepper, optional
- 8 slices thick-cut bacon, cooked
- Black pepper for the bacon, to taste
- 4 semi-thick slices leftover oven-roasted turkey breast, or Deli cold cut roasted turkey breast (about 3/4 pound, sliced 1/8" to 1/4" thick)
- 4 thick slices diagonal-sliced Deli French or Italian bread, crusts removed
- 3 - 4 ripe Roma tomatoes (or other type tomato), sliced crosswise then dried on a paper towel
- Grated Parmesan cheese for garnish
- Paprika for garnish, optional
- Chopped fresh or dried parsley for garnish, optional
Creamy Chicken and Rice Casserole

Prepare rice according to package directions, then set aside to cool
- 6 medium chicken thighs
- 3 1/2 to 4 cups prepared brown or white rice (I used 2 bags Birds Eye frozen brown rice)
- 7 medium size fresh mushrooms, sliced (about 2 c.)
- 1 1/2 teaspoons minced fresh garlic
- 2 tablespoons olive oil, divided
- 2 (10 1/2 oz) cans cream of mushroom soup (I used 98% F.F.)
- 1 1/2 cups milk
- 1/4 - 1/2 teaspoon Tony Chachere's Original creole seasoning
- Garlic powder
- Salt
- Freshly cracked black pepper
Oreo Owl Cupcakes

Chocolate-frosted cupcakes are decorated with Oreo cookies and small candies to look like "owls"
- Prepared chocolate cupcakes (cake mix or homemade)
- Chocolate frosting (canned or homemade)
- Chocolate Oreo cookies
- Brown and Orange (or Yellow) Reese's Peanut Butter Pieces (or M&M's)

Spicy Korean Beef (using ground beef)

Sweet and spicy beef is served over white or fried rice and garnished with green onions
- 1 pound lean ground beef (I used 93/7)
- 1 tablespoon sesame oil
- 2 medium cloves garlic, minced (about 2 tsp)
- 1/3 cup dark brown sugar
- 1 teaspoon white vinegar
- 1/4 cup soy sauce
- 1/2 teaspoon fresh ginger, minced
- 1/2 teaspoon crushed red peppers, or to taste
- 1/4 teaspoon black pepper
- 5-6 chopped green onions for garnish
- Cooked white, or fried rice for serving
Hamburger Steaks with Onions

Pan-grilled seasoned ground beef patties and onions in a yummy brown gravy for potatoes
- 1 1/2 to 2 lbs. lean ground beef
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic salt
- 1 medium onion, cut into thin slices then separated into rings
- 1 - 2 teaspoons oil, if needed
- Salt and pepper to taste
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce
- 2 1/2 cups beef broth
