- 1 cup Chobani Green Yogurt, Vanilla
- 1 cup water
- 2 cups spinach
- 1 orange, peeled
- 1 banana (the riper the better)
- 1 cup pineapple, cut
- 1-3 cups ice, optional
Lemon Coconut Poppy Seed Muffins

Preheat oven to 350 degrees Fahrenheit
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup plain low-fat or no-fat Greek yogurt
- 1/2 cup canned coconut milk
- 2 tablespoons fresh lemon juice
- 1 cup granulated sugar
- 1/4 cup butter, softened
- 1/4 cup unsweetened applesauce
- 1 tablespoons lemon zest
- 2 large eggs
- 2 teaspoons poppy seeds
- Shredded coconut to garnish (optional)

- 4 tbsp. butter

- 1 15 oz can pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup evaporated milk
- 2/3 cup all purpose flour
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder

Gingerbread Latte Cupcakes

- Gingerbread Cupcake:
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon salt

Morning Glory Muffins

Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 2 cups shredded carrots (3-4 medium carrots, peeled before shredding)
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup flaked coconut (sweetened or unsweetened)
- 1/2 cup shredded apple (about 1 medium apple, cored and peeled before shredding)
- 1/4 cup flaxseed (optional)
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla

- 2 cups water
- 2 cups diced unpeeled red potatoes
- 1 cup diced carrot
- 1/2 cup diced celery
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup all-purpose flour
- 2 cups 2% milk
- 2 cups (8 ounces) shredded reduced-fat cheddar cheese
- 1 cup cubed fully cooked lean ham

Pepper Steak with Rice

First, I like to start the rice so I can get it out of the way
- Place your lb. beef top round or sirloin steak, cut into strips (I buy the “stir fry” beef already cut up so it’s less work for me)
- 3 T vegetable oil
- Pepper, to taste (I use about 2 teaspoons)
- A pinch of salt
- 1 cup beef broth
- 1.5 T finely chopped garlic
- 1/4 teaspoon ground ginger
- 1 T cornstarch or flour
- 3 t sugar
- 2 T soy sauce
- 1 T Worcestershire sauce
- 1 bag frozen bells peppers and onion (about 2 cups fresh bell peppers and white onion, cut into 1/2 inch strips)
- 4 servings instant rice (I believe this is about 4 cups cooked, according to instant rice packages)
Applesauce Bread/Muffins

- 1 1/2 c. granulated sugar
- 3 c. applesauce, at room temperature
- 2 sticks unsalted butter, melted and slightly cooled
