- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 3 eggs
- 2 cups Gold Medal® all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 1/2 to 3 cups cups finely grated baby carrots
- 1 cup coarsely chopped walnuts (optional)
Microwave Bread & Butter Pickles

Mix all in a 2 quart bowl (microwavable) and microwave on High 8 to 9 minutes, stirring twice during cooking time
- 2 cups cucumbers, sliced, thin
- 3/4 cup onion, thin sliced

Irish Apple Crumble Cake

- CRUMBLE TOPPING:
- 4 ounces butter, plus extra for greasing
- 5 ounces soft light brown sugar
- 2 large free range eggs
- 7 ounces plain flour, sifted
- 1 tablespoon baking powder
- 1 pinch salt
- 1 teaspoon ground cinnamon
- 11 ounces peeled, cored and sliced cooking apple (Shouldn’t be more than one large apple)
- 2 ounces vanilla sugar (or substitute caster sugar)
- 2 ounces plain flour
- 2 ounces butter

Preheat oven to 425. Pour sugar into small bowl and add seeds of one scraped vanilla bean

- 1 vanilla bean
- 1 1/2 cups rhubarb, chopped into approx. 1/2 inch pieces

Key Lime Coconut Eclair Cake

Spray the bottom of a 9x13 pan with cooking spray
- 1 box graham crackers (there will be a few graham crackers left over)
- 2 (3 1/4-ounce) boxes vanilla instant pudding
- 1 cup shredded coconut
- 2 tsp coconut extract
- 3 1/2 cups milk
- 1 (8-ounce) container Cool Whip, thawed
- 1 (16oz) can Duncan Hines Key Lime Frosting Creations
- 1/4 cup toasted coconut
