Irish Cream Delights

Preheat oven to 350°. In a large bowl combine the butter and shortening and beat on medium speed for 30 seconds
- Frosting:
- 1/4 Cup butter, softened (1/2 stick)
- 1/4 Cup shortening
- 1 Cup sugar
- 1 TB. Irish cream liqueur (more if you like)*
- 1/4 tsp. baking soda
- 1/4 tsp. CREAM OF TARTAR
- 1/4 tsp. salt
- 1 egg, beaten
- 1 tsp. PURE VANILLA EXTRACT
- 13/4 Cups flour
- 3 TB. butter, softened
- 2 TB. Irish cream liqueur*
- 3 Cups powdered sugar
- 3 TB. half & half
Plum-Blackberry Streusel Pie

Put a foil-lined large baking sheet in lower third of oven and preheat oven to 375°F
- 1 3/4 pound ripe plums, pitted and quartered
- 3/4 pound blackberries (2 cups)
- 1 1/2 cups sugar, divided
- 3 tablespoons quick-cooking tapioca
- 2 tablespoons cornstarch
- 1 teaspoon grated lemon zest
- 3/4 teaspoon salt, divided
- 1/2 recipe all-butter pastry dough
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1 stick cold unsalted butter, cut into bits
- Equipment: a 9 1/2-inch deep-dish pie plate
Cream Cheese Coffee Cake

Preheat oven to 350°F; grease and flour (or spray with baking spray) 10-inch tube pan
- For Filling:
- 1/2 cup butter, softened
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sour cream
- 1 (8 oz.) package cream cheese, softened
- 3 tablespoons confectioners' sugar
- 3 tablespoons lemon juice
- For Topping:
- 1/4 cup walnuts, finely chopped
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
Pacific Breeze

In a pitcher, combine the vodka and lemonade and refrigerate until thoroughly chilled, about 2 hours
- 8 ounces black currant vodka
- 32 ounces lemonade
- Ice
- 1 ounce blue curaçao
- 8 lemon wheels
- 8 mint sprigs
Riesling Peaches

Stir together first 7 ingredients in a serving bowl
- 2 cups peeled and chopped fresh ripe peaches (about 2 large)
- 1/2 cup dry Riesling wine
- 1 to 2 Tbsp. light brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon coarsely chopped fresh thyme
- 1/4 teaspoon freshly ground black pepper $
- Pinch of kosher salt
- Garnish: fresh thyme sprigs
Lemon Pound Cake - Ritz Carlton

Great lemon flavor, dense but moist cake
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 3/4 tsp salt
- 3 cups sugar
- 1 cup unsalted butter, room temperature
- 1/2 cup shortening, room temperature
- 5 large eggs
- 1 cup whole milk
- 6 Tbsp lemon juice
- 1 lemon, zested
Coconut Macaroons

- 14 ounces sweetened flaked coconut
- 14 ounces sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 2 extra large egg whites, at room temperature
- 1/4 teaspoon kosher salt

Philly Cheesesteak Stew

- 1 1/2 pounds very thinly sliced beef sirloin
- Salt
- Cracked black pepper
- 1/4 teaspoon onion powder
- 4 tablespoons all-purpose flour, divided use
- Olive oil
- 2 onions, quartered and thinly sliced
- 10 ounces white mushrooms, sliced
- 1/2 teaspoon dried thyme
- 2 cloves garlic, pressed through garlic press
- 4 cups beef stock, hot
- 4 sourdough bread bowls, centers hollowed out and reserved for dipping
- 4 slices provolone cheese
