Flat Belly - Herb-Marinated Beef and Mushroom Kebabs

- 1 lb beef tenderloin, trimmed and cut into 20 cubes
- 3 tbsp chopped fresh basil
- 3 tbsp chopped fresh parsley
- 1 tbsp extra virgin olive oil, divided
- 1 clove garlic, minced
- 1 tsp dried oregano
- 16 white mushrooms
- 1 red bell pepper, seeded and cut into 16 pieces
- 1/4 tsp salt
- 4 tbsp Pesto
Buffalo Chicken Melts

Adjust an oven rack in the top third of the oven and preheat the broiler
- 1 1/2 c (7 oz) Convenient Slow-Cooker Shredded Chicken or breast meat from a store-bought rotisserie chicken.
- 1/4 c finely chopped carrots
- 1/4 c finely chopped celery
- 1 tbsp finely chopped red onion
- 1 tbsp light mayonnaise
- 2 1/2 tbsp Frank's Red Hot Sauce
- Pinch of cayenne pepper (optional)
- 4 slices multigrain bread, lightly toasted
- 8 thin slices tomato
- 4 slices (2.6 oz total) reduced-fat pepper jack cheese

- 1 tsp baking powder

- 1/2 cup chopped sun-dried tomatoes
- 2 cloves garlic, minced
- 4 tbsp olive oil
- 1/2 lb broccoli rabe, trimmed
- 12 oz boneless, skinless chicken breasts, grilled or roasted and sliced thinly
- 10 black olives, pitted and sliced (about 1/32 cup)
- 1/2 cup shredded fresh basil
- Freshly ground black pepper
- Shredded Parmesan cheese

- 4 skinless bone-in chicken breast halves (about 2 1/2 lb)
- 1/4 tsp salt, plus more to taste
- 1/4 tsp freshly ground black pepper, plus more to taste

- 1 med onion, cut in half, then thinly sliced into half-moons
- 1 med red bell pepper, seeded and cut into thin strips
- 8 oz white mushrooms, thinly sliced (about 3 cups)
- 2 cloves garlic, minced (about 2 tsp)
- 1/2 cup dry white wine
- One 14.5 oz can no-salt-added diced tomatoes, with their juices
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes, or more to taste
Sear Flat-Iron Steak w/Wine Sauce

1.Heat a large cast-iron or other heavy-bottomed skillet over medium-high until very hot
- 4 small flat-iron steaks (each about 6 ounces and 1 inch thick)
- Coarse salt and ground pepper
- 1 cup dry red wine, such as Merlot or Cabernet Sauvignon
- 2 tablespoons cold butter, cut into pieces
Chicken Drumsticks Marinated w/Honey and Soy
