Flat Belly - Steamed Snapper w/Pesto

- 6 cups baby spinach
- 1 red bell pepper, thinly sliced
- 4 snapper fillets (6 oz each)
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 4 tbsp pesto
Chicken Breasts w/Herb Basting

1.) Preheat oven to 425 degrees F (220 degrees C)
- 3 tbsp olive oil
- 1 tbsp onion, minced
- 1 clove garlic, crushed
- 1 tsp dried thyme
- 1/2 tsp dried rosemary, crushed
- 1/4 tsp ground sage
- 1/4 tsp dried marjoram
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/8 tsp hot pepper sauce
- 4 bone-in chicken breast halves, with skin
- 1 1/2 tbsp fresh parsley, chopped
Cinnamon-Roasted Butternut Squash Soup

Preheat the oven to 375 degree F Put the squash on a large baking sheet
- 40 oz peeled and seeded butternut squash, cut into 1 1/2-inch cubes, from 1 whole
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 6 tbsp sweetened coconut flakes
- 1 tbsp coconut oil
- 1/4 c minced shallots
- 2 1/4 c Pacific organic vegetable broth,*plus more as needed
- 1 c plus 2 tbsp light canned coconut milk
- 3/4 tsp kosher salt
- Freshly cracked black pepper
Sour Cream Mashed Potatoes

In lg pot, combine potatoes and enough salted water to cover
- 2 lbs med. red potatoes, unpeeled, cut into 2" pieces
- 2 tbsp butter
- 3 scallions, thinly sliced, about 1/2 cup
- 1/2 c sour cream
- 1/2 c milk
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp chopped fresh chives or finely chopped scallion greens
- Additional butter, at room temperature, optional

- 1 med. pepper(s) red and bell 1 tbsp fish sauce (soy)
- 1 med. onion 1 tsp sugar, brown, light
- 1 clove garlic 1 1/2 cups cauliflower
- 1 tbsp ginger, fresh 2 cups spinach, baby
- 1 1/2 tsp curry paste, red 1 tbsp lime juice
- 1 lb. boneless, skinless chicken breast 1 med. lime
- 1 cup broth, reduced-sodium chicken
