Southern Grits with Red-Pepper Butter

- 3 1/2 cups water
- 3/4 tsp salt
- 3/4 cup white hominy grits
- 1/2 tbsp unsalted butter (If you use salted butter, adjust the salt amount)
- 1/8 to 1/4 tsp cayenne pepper (adjust to taste).
- Fresh parsley, finely chopped (optional)
Shrimp Caprese

Olive Garden Restaurant's Shrimp Caprese Recipe
- 1 1/2 pounds Roma tomatoes, cored and cut into 1-inch pieces*
- 20 medium fresh basil leaves, stems removed and cut into 1-inch pieces
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- Salt to taste
- 1 pound (26/30 or 21/25) shrimp, peeled and deveined
- 1 pound capellini (angel hair) pasta
- 2 tablespoon butter
- 1/2 cup white wine
- 1 1/2 cups heavy cream
- 1 cup freshly-grated Parmesan cheese
- 2 cups fresh mozzarella cheese, shredded
- To preserve juices and seeds, use a pairing knife to remove just the top of the core on each tomato.
Balsamic Chicken w/Baby Spinach and Couscous

- 3 tbsp olive oil
- 4 boneless, skinless chicken breast halves (about 1 1/4 lb total), pounded between 2 sheets of waxed paper to 1/2" thickness
- 1/4 tsp salt, plus more to taste
- 1/4 tsp freshly ground black pepper, plus more to taste
- 3 cloves garlic, chopped (about 1 tbsp)
- 8 oz baby spinach leaves (about 8 cups lightly packed)
- 2 tbsp balsamic vinegar
- 1/2 cup low-sodium chicken broth
- 1 cup canned no-salt-added chopped tomatoes, with their juices
- 2 cups hot cooked whole-wheat couscous (from about 3/4 cup uncooked)

- 1 cup onion, finely chopped
- 1/4 cup green bell pepper, finely chopped
- 1/2 tsp chili powder
- 4 cups cooked potatoes, diced
- 1 can (7 oz) Diced Green Chiles
- 1 cup Thick a& Chunky Salsa
- 1 cup cooked chicken, chopped
- 1/4 cup olive oil

1.) Combine marinade ingredients in measuring cup and stir to combine
- 1/2 cup soy sauce
- 2 oranges, juices
- 1 lime, juiced
- 1/2 cup tamarind concentrate
- 1 tbsp Dijon mustard
- 1 tsp ground ginger
- 1 clove garlic, crushed
- 1 tbsp chopped scallions
- 1 pork tenderloin ( about 12 oz.)
