- 8 tsp scallions (or green onions), finely chopped
- 5 oz fresh spinach leaves (stemmed and torn into bite-size pcs)
- 8 lg eggs
- Salt and freshly ground white pepper, to taste
- 1/2 cup sharp cheddar cheese, grated

- Yellow food coloring gel (as desired for color)
- 2 cups Jet-Puffed Marshmallow Creme
