- 2 cans of crescent rolls
- 1 8oz package of cream cheese at room temp.
- 1/2 cup white sugar
- 1 tsp lemon juice
- 3/4 tsp vanilla
- 1 tsp sour cream
- 1 cup confectioner's sugar
- 1 tbsp milk
- 1 tbsp softened butter
Mini Pineapple Upside Down Cakes

This recipe will make a batch of 6 jumbo size or 8 muffin size mini pineapple upside down cakes
- TOPPING:
- 2 eggs
- 2/3 cup white sugar
- 4 tablespoons pineapple juice
- 2/3 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup butter, 1/2 stick or 4 tablespoons
- 2/3 cup brown sugar
- 1 can pineapple rings
- 6 maraschino cherries
Spaghetti w/Turkey Meatballs in Spicy Tomato Sauce

- FOR THE SAUCE:
- 1 tbsp olive oil
- 1 med onion, chopped (about 1 1/2 cups)
- 4 cloves garlic, minced (about 4 tsp)
- 3 tbsp tomato paste
- One 28 oz can crushed fire-roasted tomatoes, with their juice
- 1 tsp finely minced canned chipotle chile in adobo sauce, or more to taste
- 2 tsp dried oregano
- 1 sprig fresh rosemary
- Salt and freshly ground black pepper to taste
- 1/4 cup torn fresh basil
- FOR THE MEATBALLS:
- Cooking spray
- 1 lb lean ground turkey meat
- 1 slice whole-wheat bread, crusts removed and pulsed into crumbs in a food processor
- 1/4 cup freshly grated Parmesan
- 1/2 cup finely grated carrot
- 1/2 cup finely chopped onion
- 2 lg cloves garlic, minced (about 2 tsp)
- 2 tbsp minced fresh flat-leaf parsley
- 2 tsp minced fresh thyme
- 1 lg egg, lightly beaten
- 1/2 tsp salt
- Freshly ground black pepper
- FOR THE SPAGHETTI:
- One 16 oz box whole-wheat spaghetti
- 1/3 cup freshly grated Parmesan cheese
- Minced fresh flat-leaf parsley for garnish
Garlic-Citrus Grilled Corn

1.) Heat grill to medium. In a small bowl, combine butter, chopped parsley, citrus zests and chopped garlic
- 1/2 cup light butter with canola
- 2 tbsp fresh flat-leaf parsley, chopped
- 2 tsp (each) lemon zest, lime zest and orange zest
- 2 cloves garlic, finely chopped
- 8 ears corn, husked and cut in half

- 4 boneless, skinless chicken breast halves (4 oz each)
- 1 1/2 cups reduced-sodium chicken broth
- 2/3 cup orzo, preferably whole wheat
- 1 lemon, peeled and cut into chunks
- 1 tsp dried oregano
- 40 pitted kalamata olives, chopped (about 1 1/3 cups)
- 2 cups baby spinach
- 1 tomato, seeded and chopped
- 1/2 cup sliced roasted red pepper
- 1/4 cup crumbled feta cheese
California Grilled Veggie Sandwich

- 1/4 cup mayonnaise
- 3 cloves garlic, minced
- 1 tbsp lemon juice

- 1 cup red bell peppers, sliced

- 1 red onion, sliced
- 1 sm yellow squash, sliced
- 2 (4x6") focaccia bread pieces, split horizontally

- 1 dash garlic powder 10 chicken wings
