- 1 3/4 cups all-purpose flour
- 6 tbsp sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 lg egg, lightly beaten
- 5 1/2 tbsp butter, melted (not margarine)
- 1/2 cup fresh orange juice

Preparation
Step 1
Preheat the oven to 400 degree F. Lightly grease twelve standard muffin cups.
Place 1 tbsp of the sugar, baking powder, and salt in a large mixing bowl, whisk together to blend. Add the egg, milk, and butter. Mix lightly until the ingredients are moistened (batter will be lumpy).
Fill each muffin cup about 2/3 full. Bake for 20 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
While muffins are baking, place the orange juice and remaining 4 tbsp sugar in a small saucepan. Simmer over low heat for about 5 minutes, stirring frequently.
As soon as you remove the muffins from the oven, spoon the warm orange glaze over them while still in a pan. Allow to cool slightly before serving.
